It comes from the same plant as the yellow and red pepper. These different colours are determined by the stage of ripening. <\/span><b>Pepper is green when not yet ripe. As it ripens, it turns yellow, then orange, then red <\/b><span style=\"font-weight: 400;\">(Nolte, 2012).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Pepper is the second most consumed vegetable in the world (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24885401\/\"><span style=\"font-weight: 400;\">Guo, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It originates from tropical regions and is very sensitive to low temperatures, which affect its vegetative development (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24885401\/\"><span style=\"font-weight: 400;\">Guo, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">There are different types of peppers: sweet, mild, etc. (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24885401\/\"><span style=\"font-weight: 400;\">Guo, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fructose and (E)-2-hexene-1-ol are strongly correlated with the fruity\/apple taste and sweetness of pepper. The compounds p-menth-1-en-9-al, (E)-\u03b2-ocimene, (Z)-2-pentene-1-ol and (E)-geranylacetone are also thought to be related to this taste (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26434294\/\"><span style=\"font-weight: 400;\">Eggink, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Pepper, when green in colour, is edible but not yet ripe.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>The pigment responsible for this colour is mainly chlorophyll <\/b><span style=\"font-weight: 400;\">(Lightbourn, 2008), but green pepper also contains xanthophylls and its derivatives (e.g. lutein, xanthophyll esters) and carotenes in smaller amounts (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27391392\/\"><span style=\"font-weight: 400;\">Bonaccorsi, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Green pepper contains less free xanthophylls than yellow pepper, but more than red pepper. On the other hand, it contains less xanthophyll esters and carotenes than yellow pepper and red pepper (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27391392\/\"><span style=\"font-weight: 400;\">Bonaccorsi, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Volatile sulphur compounds such as \u03b2-mercaptoheptanones and \u03b2-mercaptoheptanols are responsible for its odour once cooked <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubs.acs.org\/doi\/10.1021\/acs.jafc.7b04336\"><span style=\"font-weight: 400;\">N\u00f6renberg, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Green peppers are known for their <\/span><b>fibre content <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23996968\/\"><span style=\"font-weight: 400;\">Hernandez-Carrion, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">They contain few carotenoids, flavonoids and polyphenols compared to red and yellow pepper, but more phenolic acids, especially \u03c1-coumaric acid (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27391392\/\"><span style=\"font-weight: 400;\">Bonaccorsi, 2016<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31608259\/\"><span style=\"font-weight: 400;\">Tuphairo, 2019<\/span><\/a><span style=\"font-weight: 400;\">). Its content of carotenoids and polyphenols gives it its antioxidant activity (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31608259\/\"><span style=\"font-weight: 400;\">Tuphairo, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Phenolic acids contribute to general health through their antioxidant and anti-inflammatory effects<\/b><span style=\"font-weight: 400;\">.
