An analysis was carried out on 31 leek cultivars to quantify these 2 compounds. It was found that the white part of leek contains a higher amount of isollin (15 to 53 mg\/g) and methiin (3 to 16 mg\/g) than the green part (9 to 45 mg\/g of isollin and 1 to 10 mg\/g of methiin) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23020262\/\"><span style=\"font-weight: 400;\">Bernaert, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The presence of <\/span><b>sulphur compounds, <\/b><span style=\"font-weight: 400;\">specifically S-alkyl-cysteine sulphoxides, <\/span><b>also participates in the taste of leek<\/b><span style=\"font-weight: 400;\">. These are transformed into volatile sulphur compounds (e.g. thiosulphinates) during cooking (Ravindran, 2017). Bitterness is contributed by the presence of saponins (Ravindran, 2017).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Leeks contain kaempferol derivatives and quercetin derivatives, the concentrations of which differ from cultivar to cultivar (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24408868\/\"><span style=\"font-weight: 400;\">Soininen, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Phenolic compounds are present in greater amounts in the green part of the leaves, compared to the white part.
