The toothed leaves, which vary in shape by the depth of the teeth, are arranged in a rosette at the base of the aerial part. All parts are <\/span><b>edible<\/b><span style=\"font-weight: 400;\">: roots, leaves and flowers (<\/span><a href=\"https:\/\/www.aly-abbara.com\/museum\/photographie\/Pissenlit\/capitules-02.html\"><span style=\"font-weight: 400;\">Abbara, 2016<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\"><span style=\"font-weight: 400;\">Grauso, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>flower<\/b><span style=\"font-weight: 400;\">, as it is called,<\/span> <span style=\"font-weight: 400;\">is actually a set of <\/span><b>ligulate florets <\/b><span style=\"font-weight: 400;\">that make up a bright yellow flower head (<\/span><a href=\"https:\/\/www.aly-abbara.com\/museum\/photographie\/Pissenlit\/capitules-02.html\"><span style=\"font-weight: 400;\">Abbara, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The petiole of the &#8220;Garnet Stem&#8221; variety is red, due to the presence of <\/span><b>anthocyanins <\/b><span style=\"font-weight: 400;\">(polyphenols of the flavonoid family): Cyanidin-3-glucoside, Cyanidin-3-(&#8220;-malonyl)-glucoside (I-1) and (I-2) and Peonidin-3-(6&#8221;-malonyl)-glucoside (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\"><span style=\"font-weight: 400;\">Gomez, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The leaves contain a <\/span><b>high content of chlorophyll a and b<\/b><span style=\"font-weight: 400;\">, giving them their green colour (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\"><span style=\"font-weight: 400;\">Gomez, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">One study found several <\/span><b>polyphenols <\/b><span style=\"font-weight: 400;\">in dandelion flowers, including gallic acid (44.14 \u00b5g\/g dry matter), rutin (18.66 \u00b5g\/g dry matter), resveratrol (274.92 \u00b5g\/g dry matter), vanillic acid (82.88 \u00b5g\/g dry matter) and sinapic acid (593.04 \u00b5g\/g dry matter) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24177700\/\"><span style=\"font-weight: 400;\">Lopez-Garcia, 2013<\/span><\/a><span style=\"font-weight: 400;\">). <\/span><b>Flavones <\/b><span style=\"font-weight: 400;\">are<\/span> <span style=\"font-weight: 400;\">also found: luteolin and chryoeriol (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\"><span style=\"font-weight: 400;\">Milek, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Taraxasterol (triterpene) has also been isolated from dandelion (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23727181\/\"><span style=\"font-weight: 400;\">Liu, 2013<\/span><\/a><span style=\"font-weight: 400;\">). This is reported to have <\/span><b>anti-inflammatory <\/b><span style=\"font-weight: 400;\">and <\/span><b>antioxidant <\/b><span style=\"font-weight: 400;\">effects, which may notably allow it to be beneficial in certain conditions such as alcohol-damaged liver, high-fat diet (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30344887\/\"><span style=\"font-weight: 400;\">Xu, 2018<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/33035580\/\"><span style=\"font-weight: 400;\">Li, 2020)<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><b>stomach cancer <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32701378\/\"><span style=\"font-weight: 400;\">Chen, 2020<\/span><\/a><span style=\"font-weight: 400;\">) and <\/span><b>colon inflammation <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31410133\/\"><span style=\"font-weight: 400;\">Che, 2019<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30927736\/\"><span style=\"font-weight: 400;\">Chen, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Dandelion leaves contain <\/span><b>organic acids <\/b><span style=\"font-weight: 400;\">including, from most to least abundant: malic acid, malonic acid, tartaric acid, citric acid, quinic acid, succinic acid, acetic acid and formic acid (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\"><span style=\"font-weight: 400;\">Grauso, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Like the flowers, the leaves also contain <\/span><b>polyphenols <\/b><span style=\"font-weight: 400;\">such as flavonoids (luetolin and derivatives, quercetin derivatives) and phenolic acids (caffeic acid and caffeoyl derivatives, chicoric acid) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29548293\/\"><span style=\"font-weight: 400;\">Flores-Oceloti, 2018<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\"><span style=\"font-weight: 400;\">Grauso, 2019<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\"><span style=\"font-weight: 400;\">Milek, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The leaves also contain <\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">, such as \u03b2-carotene, lutein and violaxanthin. On the other hand, the chlorophyll and carotenoid content depends on the variety and location of the crop (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\"><span style=\"font-weight: 400;\">Gomez, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The presence of polyphenols and carotenoids gives dandelion <\/span><b>antioxidant activity <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\"><span style=\"font-weight: 400;\">Gomez, 2018<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31443195\/\"><span style=\"font-weight: 400;\">Aremu, 2019<\/span><\/a><span style=\"font-weight: 400;\">), which is greater in leaves than in flowers (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\"><span style=\"font-weight: 400;\">Milek, 2019<\/span><\/a><span style=\"font-weight: 400;\">)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Luteolin and derivatives of caffeic and caffeoylquinic acid have shown an <\/span><b>antiviral effect <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29548293\/\"><span style=\"font-weight: 400;\">Flores-Oceloti, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Luteolin is also thought to be an <\/span><b>anti-diabetic <\/b><span style=\"font-weight: 400;\">by inhibiting \u03b1-glucosidase, which prevents the digestion of carbohydrates (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29254644\/\"><span style=\"font-weight: 400;\">Choi, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In addition, chicoric acid, taxasterol, chlorogenic acid, and lactone sesquiterpenes contained in dandelion also help <\/span><b>fight type 2 diabetes<\/b><span style=\"font-weight: 400;\">. Lactone sesquiterpenes are usually extracted from the roots, but are also contained in the leaves of dandelion, such as taraxinic acid and \u03b2-D glucopyranoside (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28012278\/\"><span style=\"font-weight: 400;\">Wirngo, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">The main components identified in a hexane extract of dandelion leaves are phytol, lupeol, taraxasteryl acetate, \u03b2-sitosterol, \u03b1-amyrin, \u03b2-amyrin and cycloartenol acetate (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28902635\/\">Ivanov, 2018<\/a>).
