Lycopene is the main <\/span><b>carotenoid <\/b><span style=\"font-weight: 400;\">in the pulp of <\/span><b>red-fleshed papaya<\/b><span style=\"font-weight: 400;\">, while \u03b2-carotene and \u03b2-cryptoxanthin are the main <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">in the pulp of <\/span><b>yellow-fleshed papaya <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30651061\/\"><span style=\"font-weight: 400;\">Shen, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During ripening, the skin colour of red-fleshed papaya changes from green to yellow, and its flesh colour changes from white to red, due to the <\/span><b>rapid breakdown <\/b><span style=\"font-weight: 400;\">of <\/span><b>chlorophyll <\/b><span style=\"font-weight: 400;\">and the appearance of <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">such as lutein and \u03b2-carotene (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30651061\/\"><span style=\"font-weight: 400;\">Shen, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The main <\/span><b>volatile compounds <\/b><span style=\"font-weight: 400;\">of papaya belong to the <\/span><b>ester <\/b><span style=\"font-weight: 400;\">and <\/span><b>terpene <\/b><span style=\"font-weight: 400;\">family such as linalool and benzyl isothiocyanate (<\/span><a href=\"https:\/\/1library.co\/document\/zkejgxez-tendencias-publicaciones-relacion-aroma-papaya.html\"><span style=\"font-weight: 400;\">Pino, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Among the one hundred and thirty-seven aromatic components identified in Red Maradol papaya fruit, twenty-five are considered the most active and contribute to the <\/span><b>typical <\/b><span style=\"font-weight: 400;\">papaya <\/span><b>aroma <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24176322\/\"><span style=\"font-weight: 400;\">Pino, 2014<\/span><\/a><span style=\"font-weight: 400;\">).
