Turkey&#8217;s citrus production is one of the largest in the Mediterranean basin (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23079821\/\"><span style=\"font-weight: 400;\">Polat, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Carotenoids<\/b><span style=\"font-weight: 400;\">, including violaxanthin, \u03b2-cryptoxanthin, \u03b2-carotene, lutein, zeaxanthin and \u03b1-carotene, are thought to be the\u00a0<\/span><b>main pigments in oranges<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/agris.fao.org\/agris-search\/search.do?recordID=US201900315398\"><span style=\"font-weight: 400;\">Gao, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Ethyl butanoate, ethyl 2-methylbutanoate, octanal, decanal and acetaldehyde are believed to be essential compounds for orange aroma (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29237265\/\"><span style=\"font-weight: 400;\">Feng, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The acidity of the orange increases during the second stage of development, called &#8220;fruit enlargement&#8221;, and then decreases during the third and final stage, called &#8220;fruit ripening&#8221;.
