It is a biennial plant of Central Asian origin (<\/span><a href=\"https:\/\/ericbirlouez.fr\/index.php\/activites\/articles\/39-ail-o-i-gnon-et-autres-alliacees-approche-historique-culturelle-et-culinaire-revue-phytotherapie-avril-2016\"><span style=\"font-weight: 400;\">Birlouez, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The spring onion consists of a stem, root, bulb and skin (<\/span><a href=\"https:\/\/patents.google.com\/patent\/US4068011A\/en\"><span style=\"font-weight: 400;\">Green, 1978<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">There are many varieties of onion, differing in colour and stage of ripening.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>The spring onion is a spring vegetable<\/b><span style=\"font-weight: 400;\"> and is eaten at the beginning of its formation.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It can be eaten raw or cooked. It adds a sweet note to salads.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The skin of the spring onion is white and the stems are green.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The growth of spring onions and the size of their bulbs increase proportionally with the increase in cultivation temperature (<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/330048444_Sowing_time_and_temperature_influence_bulb_development_in_spring-sown_onion_Allium_cepa_L\"><span style=\"font-weight: 400;\">Ikeda, 2019)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Spring onion contains a <\/span><b>significant amount of flavonoids<\/b><span style=\"font-weight: 400;\">\u00a0(including quercetin), polyphenols with antioxidant properties (<\/span><a href=\"https:\/\/www.rjpbcs.com\/pdf\/2017_8(2)\/%5b205%5d.pdf\"><span style=\"font-weight: 400;\">Aslam, 2017<\/span><\/a><span style=\"font-weight: 400;\">)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">One study showed that extracts of spring onion were effective in the\u00a0<b>treatment of cardiovascular disease, obesity, high cholesterol, type 2 diabetes and hypertension<\/b>. Thanks to their thiosulphate content, hypocholesterolemic, hypolipidemic, antihypertensive, antidiabetic, antithrombotic and antihyperhocysteinemic effects are found (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16388813\/\">Lanzotti, 2006<\/a>;\u00a0<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0924224407002282\">Corzo-Mart\u00ednez,
