The mung bean (<\/span><i><span style=\"font-weight: 400;\">Vigna radiata <\/span><\/i><span style=\"font-weight: 400;\">L.) is a member of the Fabaceae family (<\/span><a href=\"https:\/\/inpn.mnhn.fr\/espece\/cd_nom\/630879\/tab\/taxo\"><span style=\"font-weight: 400;\">INPN, 1954<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It is native to India (<\/span><a href=\"https:\/\/agritrop.cirad.fr\/582490\/7\/ID582490_ENG.pdf\"><span style=\"font-weight: 400;\">Akpapunam, 1996<\/span><\/a><span style=\"font-weight: 400;\">) and, today, widely cultivated in Asia (<\/span><a href=\"https:\/\/agritrop.cirad.fr\/582490\/\"><span style=\"font-weight: 400;\">Heuz\u00e9, 2015<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Soybean sprouts are produced by germinating mung bean seeds in a controlled environment at high temperature (22-24\u00b0C) and humidity (75\u00b15%) for 5 days (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31027796\/\"><span style=\"font-weight: 400;\">Lacumin, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Thanks to their <\/span><b>low price <\/b><span style=\"font-weight: 400;\">and health <\/span><b>benefits<\/b><span style=\"font-weight: 400;\">, bean sprouts are among the most consumed shoots in the world and especially in Asian countries (<\/span><a href=\"https:\/\/agritrop.cirad.fr\/582490\/\"><span style=\"font-weight: 400;\">Heuz\u00e9, 2015<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28763980\/\"><span style=\"font-weight: 400;\">Ebert, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Soybean sprouts are long: they measure between 7 and 9 cm for the stem and between 3 and 4 cm for the roots (<\/span><a href=\"https:\/\/pubs.rsc.org\/en\/content\/articlelanding\/2018\/nr\/c8nr01644e#!divAbstract\"><span style=\"font-weight: 400;\">Zhang, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fresh shoots are quite firm (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15726975\/\"><span style=\"font-weight: 400;\">Bari, 2005<\/span><\/a><span style=\"font-weight: 400;\">) with a <\/span><b>slightly sweet and nutty taste <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/d-nb.info\/1031514694\/34\"><span style=\"font-weight: 400;\">NaJom, 2012<\/span><\/a><span style=\"font-weight: 400;\">)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Their colour is white (<\/span><a href=\"https:\/\/d-nb.info\/1031514694\/34\"><span style=\"font-weight: 400;\">NaJom, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">They do not keep well and should be eaten quickly (1 or 2 days). When stored at room temperature, the shoots continue to grow and expire. Signs of expiration are: browning of roots and cotyledons, dark spots on the stem, thinning, development of a musty odour and decrease in acidity. Low temperature storage extends the shelf life to 5 days (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15726975\/\"><span style=\"font-weight: 400;\">Bari, 2005<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25328209\/\"><span style=\"font-weight: 400;\">Goyal, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Hexanol, benzyl alcohol, \u03d2-butyrolactone, 2-methyl-2-propenal and pentanol have been identified as the main components responsible for the aroma of soybean sprouts (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/10995351\/\"><span style=\"font-weight: 400;\">Lee, 2000<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Soybean sprouts contain <\/span><b>free polyphenols <\/b><span style=\"font-weight: 400;\">including <\/span><b>flavonoids <\/b><span style=\"font-weight: 400;\">and <\/span><b>phenolic acids<\/b><span style=\"font-weight: 400;\">. <\/span><b>Flavonoids <\/b><span style=\"font-weight: 400;\">include quercetin, kaempferol, luteolin and apigenin (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24054243\/\"><span style=\"font-weight: 400;\">Pajak, 2014<\/span><\/a><span style=\"font-weight: 400;\">), but also vitexin, isovitexin, rutin, isoquercetin, genistein, daidzein and iosrhamnetin (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24203396\/\"><span style=\"font-weight: 400;\">Tang, 2014a)<\/span><\/a><span style=\"font-weight: 400;\">. Among the <\/span><b>phenolic acids, <\/b><span style=\"font-weight: 400;\">gallic acid, caffeic acid, \u03c1-coumaric acid, ferulic acid, chlorogenic acid and sinapic acid are found. Some of these compounds are also found in more complex forms bound to cell walls (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24054243\/\"><span style=\"font-weight: 400;\">Pajak, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The content of phenolic acids and flavonoids increases with the germination time (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23088738\/\"><span style=\"font-weight: 400;\">Guo, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Soybean sprouts contain very few carotenoids. Among those analysed, lutein was the most abundant (from 0.15 to 0.19 mg\/100 g). As for \u03b1 and \u03b2-carotene, they had low levels (0.01 mg\/100 g and between 0.053 and 0.073 mg\/100 g, respectively) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28763980\/\"><span style=\"font-weight: 400;\">Ebert, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Polyphenols impart <\/span><b>antioxidant activity <\/b><span style=\"font-weight: 400;\">to soybean sprout (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23088738\/\"><span style=\"font-weight: 400;\">Guo, 2012<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24054243\/\"><span style=\"font-weight: 400;\">Pajak, 2014<\/span><\/a><span style=\"font-weight: 400;\">). They are known to have <\/span><b>anti-inflammatory <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30400131\/\"><span style=\"font-weight: 400;\">Yahfoufi, 2018<\/span><\/a><span style=\"font-weight: 400;\">), <\/span><b>anti-cancer <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31159173\/\"><span style=\"font-weight: 400;\">Hou, 2019<\/span><\/a><span style=\"font-weight: 400;\">) and <\/span><b>antiseptic effects <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24438453\/\"><span style=\"font-weight: 400;\">Tang, 2014b)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">An <\/span><b>enzyme <\/b><span style=\"font-weight: 400;\">(chitinase) and some <\/span><b>peptides <\/b><span style=\"font-weight: 400;\">(nsLTP, mungin) isolated from soybean sprouts show <\/span><b>antimicrobial effect <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24438453\/\"><span style=\"font-weight: 400;\">Tang, 2014b<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Vitexin <\/b>and <b>isovitexin <\/b>show <b>hypolipidemic <\/b>and <b>hypoglycemic <\/b>effects (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31159173\/\">Hou, 2019<\/a>).<\/li>\n<\/ul>\n","references":"<ul>\n<li>Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail.
