These play an important role in the quality of the grape especially because of their contribution to its <\/span><b>colour <\/b><span style=\"font-weight: 400;\">and <\/span><b>taste<\/b><span style=\"font-weight: 400;\">.<\/span>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><span style=\"font-weight: 400;\">White grapes owe their golden yellow colour to the presence of <\/span><b>flavonols<\/b><span style=\"font-weight: 400;\">, yellow colour pigments, but mostly to <\/span><b>the absence of anthocyanins <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/europepmc.org\/article\/med\/26471534\"><span style=\"font-weight: 400;\">Ferreira, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><b>Flavonols <\/b><span style=\"font-weight: 400;\">and <\/span><b>flavanols <\/b><span style=\"font-weight: 400;\">also contribute to <\/span><b>the astringency <\/b><span style=\"font-weight: 400;\">and <\/span><b>bitterness <\/b><span style=\"font-weight: 400;\">of grapes (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/11101467\/\"><span style=\"font-weight: 400;\">Drewnowski, 2000<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The firmness of the fruit decreases with ripening. This change is partly due to a change in <\/span><b>sugar <\/b><span style=\"font-weight: 400;\">composition at the <\/span><b>cell wall <\/b><span style=\"font-weight: 400;\">level. (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30064789\/\"><span style=\"font-weight: 400;\">Zepeda, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Due to their high levels of <\/span><b>phytomicronutrients <\/b><span style=\"font-weight: 400;\">(carotenoids, polyphenols, etc.), many studies have shown that regular consumption of grapes is linked to a <\/span><b>reduced risk of developing chronic diseases, including some types of cancer and cardiovascular diseases <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/journals.sagepub.com\/doi\/abs\/10.1177\/1934578X0900400502\"><span style=\"font-weight: 400;\">Iriti, 2009<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24007424\/\"><span style=\"font-weight: 400;\">Yang, 2013<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29042289\/\"><span style=\"font-weight: 400;\">Costa, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Polyphenol composition of white grapes:<\/span>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><span style=\"font-weight: 400;\">The majority polyphenols are <\/span><b>flavonols<\/b><span style=\"font-weight: 400;\">, followed by <\/span><b>flavan-3-ols <\/b><span style=\"font-weight: 400;\">and <\/span><b>phenolic acids <\/b><span style=\"font-weight: 400;\">(hydroxycinnamic acids and hydroxybenzoic acids) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24206441\/\"><span style=\"font-weight: 400;\">Gonz\u00e1lez-Centeno, 2013<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28946307\/\"><span style=\"font-weight: 400;\">Aubert, 2018<\/span><\/a><span style=\"font-weight: 400;\">).
