In particular, procyanidins, ferulic acid and chlorogenic acid are thought to be responsible for the astringent taste (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29508396\/\"><span style=\"font-weight: 400;\">Pinto, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The\u00a0<\/span><b>phenolic profile<\/b><span style=\"font-weight: 400;\">\u00a0of two blackberry cultivars, Loch Ness and Chester Thornless, was studied. Thirty abundant phenolic compounds were identified. The main ones were chlorogenic acid, caffeic acid, cinnamic acid, ferulic acid and ellagic acid (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29508396\/\"><span style=\"font-weight: 400;\">Pinto, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chlorogenic acid has several health benefits including\u00a0<\/span><span style=\"font-weight: 400;\">antioxidant<\/span><span style=\"font-weight: 400;\">, antibacterial, hepato-protective, cardio-protective, anti-inflammatory, neuro-protective, anti-obesity, antiviral, antimicrobial and anti-hypertensive properties (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29080460\/\"><span style=\"font-weight: 400;\">Naveed, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Similarly, caffeic acid, ferulic acid, cinnamic acid and ellagic acid exhibit\u00a0<\/span><span style=\"font-weight: 400;\">antioxidant<\/span><span style=\"font-weight: 400;\">, anti-inflammatory and also anti-cancer properties (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28230764\/\"><span style=\"font-weight: 400;\">Adisakwattana, 2017<\/span><\/a><span style=\"font-weight: 400;\">;<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27903226\/\"><span style=\"font-weight: 400;\">Habtemariam, 2017<\/span><\/a><span style=\"font-weight: 400;\">;\u00a0<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29847844\/\"><span style=\"font-weight: 400;\">R\u00edos, 2018<\/span><\/a><span style=\"font-weight: 400;\">;\u00a0<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30235459\/\"><span style=\"font-weight: 400;\">Zdu\u0144ska, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">These fruits also contain\u00a0<\/span><b>flavonoids<\/b><span style=\"font-weight: 400;\">, including anthocyanins, which give them\u00a0<\/span><span style=\"font-weight: 400;\">antioxidant properties<\/span><span style=\"font-weight: 400;\">.
