Its epidermis is covered with a hydrophobic surface with a matt appearance, composed of the\u00a0<\/span><b>cuticle<\/b><span style=\"font-weight: 400;\">\u00a0and an\u00a0<\/span><b>epicuticular wax<\/b><span style=\"font-weight: 400;\">. The thicker this hydrophobic surface, the better the fruit retains its physical and nutritional qualities during harvesting and storage (<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/j.1365-2621.1985.tb13421.x\"><span style=\"font-weight: 400;\">Sapers, 1985<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The skin (epidermis + hydrophobic surface) is\u00a0<\/span><b>blue<\/b><span style=\"font-weight: 400;\">\u00a0and the\u00a0<\/span><b>flesh yellowish white<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26266408\/\"><span style=\"font-weight: 400;\">Michalska, 2015<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The blue colour of the skin is due to the presence of\u00a0<\/span><b>anthocyanins<\/b><span style=\"font-weight: 400;\">. At least 14 anthocyanins and 3 acetylated anthocyanins have been quantified, with delphidin 3-galactoside, petunidin 3-galactoside and malvidin 3-galactoside being the most represented (<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.1885\"><span style=\"font-weight: 400;\">Cho, 2004<\/span><\/a><span style=\"font-weight: 400;\">). <\/span><b>Chlorogenic acid<\/b><span style=\"font-weight: 400;\">, also present, is a co-pigment that intensifies the colour of the anthocyanins (<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/0031942290854118\"><span style=\"font-weight: 400;\">Mazza, 1990<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Conversely, the &#8220;absence of colour&#8221; of the flesh is characterised by the virtual absence of anthocyanins (<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/j.1365-2621.2004.tb13651.x?casa_token=4T8OjcgY2w4AAAAA:b28kkg50xiNsxz43tjZcZ1agu6SA4za0r41MLMiGgRYtNpmMv3F4j0EVYk9sFOCfNYtkAL13LIx5yqI\"><span style=\"font-weight: 400;\">Lee, 2006<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During ripening, the blueberry becomes\u00a0<\/span><b>less and less acidic<\/b><span style=\"font-weight: 400;\">, with a titratable acidity that decreases. Malic acid is the predominant organic acid, responsible for the acidity of the fruit (<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608000587\"><span style=\"font-weight: 400;\">Castrej\u00f3n, 2008<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The content of\u00a0<\/span><b>proanthocyanidins<\/b><span style=\"font-weight: 400;\">, responsible for the bitter taste of unripe fruits,\u00a0also<\/span><b> decreases<\/b><span style=\"font-weight: 400;\">\u00a0with ripening (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22086422\/\"><span style=\"font-weight: 400;\">Zifkin, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Ripe blueberry has a\u00a0<\/span><b>sweet taste<\/b><span style=\"font-weight: 400;\">, the intensity of which varies according to the cultivar (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28598508\/\"><span style=\"font-weight: 400;\">Mennella, 2017<\/span><\/a><span style=\"font-weight: 400;\">). This sweetness is due to the presence of\u00a0<\/span><b>sucrose<\/b><span style=\"font-weight: 400;\">, but also\u00a0<\/span><b>fructose, galactose and glucose<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30708258\/\"><span style=\"font-weight: 400;\">Montecchiarini, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Concerning the\u00a0<\/span><b>aroma<\/b><span style=\"font-weight: 400;\">\u00a0of blueberries, more than\u00a0<\/span><b>120 volatile compounds<\/b><span style=\"font-weight: 400;\">\u00a0have been listed (Sater, 2020). Among them, 1-penten-3-ol, hexanal, (E)-2-hexenal, (E)-2-hexen-1-ol, and linalool are thought to play significant roles. During ripening, the average amount of all volatile compounds increases (<\/span><a href=\"https:\/\/journals.ashs.org\/hortsci\/view\/journals\/hortsci\/48\/7\/article-p835.xml\"><span style=\"font-weight: 400;\">Gilbert, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Blueberry contains\u00a0<\/span><b>polyphenols<\/b><span style=\"font-weight: 400;\">:\u00a0<\/span><b>flavonoids<\/b><span style=\"font-weight: 400;\">\u00a0(proanthocyanidins and flavonols),\u00a0<\/span><b>phenolic acids<\/b><span style=\"font-weight: 400;\">\u00a0(gallic, syringic, vanillic and hydroxycinnamic acids) and\u00a0<\/span><b>stilbenes <\/b><span style=\"font-weight: 400;\">derivatives The polyphenol content can be up to 304 mg\/100 g of fresh fruit, depending on the cultivar and ripeness. They are mainly present in the\u00a0<\/span><b>outer layers<\/b><span style=\"font-weight: 400;\">\u00a0(the skin and just under the epidermis). Only a small amount is found in the flesh (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26266408\/\"><span style=\"font-weight: 400;\">Michalska, 2015<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">While anthocyanin content increases with ripening, the contents of proanthocyanidins, flavonols and hydroxycinnamic acids, a family of phenolic acids, decrease (<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608000587\"><span style=\"font-weight: 400;\">Castrej\u00f3n, 2008<\/span><\/a><span style=\"font-weight: 400;\">;\u00a0<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22086422\/\"><span style=\"font-weight: 400;\">Zifkin, 2012<\/span><\/a><span style=\"font-weight: 400;\">).
