The Agretis melon variety, commonly known as wild melon, has a thin mesocarp and tiny seeds (<\/span><a href=\"https:\/\/www.phcogrev.com\/sites\/default\/files\/PharmacognRev-14-27-28.pdf\"><span style=\"font-weight: 400;\">Kapoor, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Its diameter varies from 4 to 200 cm and its weight from 50 g to 15 kg. It can be<\/span><b>\u00a0round, oval, pear-shaped or spindle-shaped<\/b><span style=\"font-weight: 400;\">. Its rind is sinuous, with or without stripes, of green, yellow, white, orange, red or grey colour. Its pulp can be\u00a0<\/span><b>orange, green, cream or white<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18322855\/\"><span style=\"font-weight: 400;\">Nu\u00f1ez-Palenius, 2008<\/span><\/a><span style=\"font-weight: 400;\">;\u00a0<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\"><span style=\"font-weight: 400;\">Paris, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Carotenoids<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>chlorophyll<\/b><span style=\"font-weight: 400;\">\u00a0are recognised as the major pigments in melon rind (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20815398\/\"><span style=\"font-weight: 400;\">Tadmor, 2010<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A study identified more than\u00a0<\/span><b>fifty volatile compounds<\/b><span style=\"font-weight: 400;\">\u00a0and fifty semi-volatile compounds, including fifteen active odorant compounds, mostly esters (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23561221\/\"><span style=\"font-weight: 400;\">Lignou, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The Reticulatus and Cantaloupe cultivars are the most\u00a0<\/span><b>fragrant<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>aromatic<\/b><span style=\"font-weight: 400;\">, while the Casabas cultivar is known to be odourless, but very sweet (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\"><span style=\"font-weight: 400;\">Paris, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The\u00a0<\/span><b>flesh of the fruit,<\/b><span style=\"font-weight: 400;\"> regardless of cultivar, is bland when the fruit is not yet ripe and becomes sweeter as it ripens (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\"><span style=\"font-weight: 400;\">Paris, 2012<\/span><\/a><span style=\"font-weight: 400;\">). Sucrose is the main sugar that accumulates during ripening (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29018473\/\"><span style=\"font-weight: 400;\">Argyris, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The\u00a0<\/span><b>sensory attributes<\/b><span style=\"font-weight: 400;\">\u00a0characteristic of melon are its firmness, crunchiness and juiciness.
