Aspartic acid, glutamic acid and arginine were found to be the major free amino acids reduced in cooked chestnuts (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26868551\/\"><span style=\"font-weight: 400;\">Li, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Cooking<\/b><span style=\"font-weight: 400;\">\u00a0method influences the physico-chemical properties of chestnut. Boiling and roasting them significantly reduces their total\u00a0<\/span><b>starch <\/b><span style=\"font-weight: 400;\">content. Thus, the granular microstructure of chestnut starch is gradually destroyed during heat treatment (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27474607\/\"><span style=\"font-weight: 400;\">Kan, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Fifty-eight common aroma components<\/b><span style=\"font-weight: 400;\">\u00a0have been identified among boiled, roasted and raw Chinese chestnuts. The main odorants responsible for chestnut aroma are reportedly seventeen volatile substances, including 3-methylbutanal (E)-3-penten-2-one, ethylbenzene, heptanal, benzaldehyde, 2-pentylfuran, octanal benzeneacetaldehyde, (E)-2-octenal, (E,E )-3,5-octadien-2-one, linalool, nonanal, ( E ) -2-nonenal decanal, (Z)-hex-3-en-1-yl hexanoate, trans-\u03b2-ionone and (E)-nerolidol (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29735103\/\"><span style=\"font-weight: 400;\">Zhu, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chestnuts are a source of\u00a0<\/span><b>phenolic components<\/b><span style=\"font-weight: 400;\">, and more specifically of\u00a0<\/span><b>tannins<\/b><span style=\"font-weight: 400;\">\u00a0classified in two major groups: hydrolysable tannins (gallotannins and elleagitannins) and condensed tannins (proanthocyanidins) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23533692\/\"><span style=\"font-weight: 400;\">Chiarini, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Some rare pipecolic acid derivatives, such as N-methylpipecolic acid, 4-hydroxypipecolic acid and 4-hydroxy-N-methylpipecolic acid were identified for the first time in chestnut samples. These <\/span><b>alkaloid compounds<\/b><span style=\"font-weight: 400;\"> are thought to have <\/span><b>prophylactic properties<\/b><span style=\"font-weight: 400;\"> (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26593620\/\"><span style=\"font-weight: 400;\">Servillo, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">When cooked (boiled, roasted or fried), their content of\u00a0<b>starch<\/b>,\u00a0<b>soluble protein<\/b>,\u00a0<b>sucrose<\/b>,\u00a0<b>organic acids<\/b>\u00a0and\u00a0<b>flavonoids<\/b>\u00a0is significantly lower than that of fresh chestnuts. However, the content of amylose, fat, crude protein and total polyphenols varies slightly (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26868551\/\">Li,
