<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24665721\/\"><span style=\"font-weight: 400;\">Huang, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">It is a <\/span><b>non-climacteric <\/b><span style=\"font-weight: 400;\">fruit, meaning it only ripens on the tree (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23547657\/\"><span style=\"font-weight: 400;\">Wang, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">&#8216;Chinensis&#8217; lychee is characterised by a short shelf life and high seed content (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23547657\/\"><span style=\"font-weight: 400;\">Pandey, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The fruit consists of <\/span><b>drupes <\/b><span style=\"font-weight: 400;\">with a <\/span><b>translucent white, solidified<\/b><span style=\"font-weight: 400;\">, <\/span><b>sweet-tasting edible aril <\/b><span style=\"font-weight: 400;\">surrounded by a brightly coloured pericarp (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24466010\/\"><span style=\"font-weight: 400;\">La\u00ef, 2014<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31384775\/\"><span style=\"font-weight: 400;\">Zeng, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The red colour of the pericarp is the result of <\/span><b>anthocyanin <\/b><span style=\"font-weight: 400;\">accumulation. This concentration varies among lychee cultivars, developmental stages and environmental stimuli (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24466010\/\"><span style=\"font-weight: 400;\">La\u00ef, 2014)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Rose oxide<\/b><span style=\"font-weight: 400;\">, an aromatic substance belonging to monoterpenes, gives lychee its smell (<\/span><a href=\"https:\/\/ifst.onlinelibrary.wiley.com\/doi\/abs\/10.1111\/jfpp.14003\"><span style=\"font-weight: 400;\">Tang, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>31 components <\/b><span style=\"font-weight: 400;\">actively participating in the aroma of &#8216;Sweetheart&#8217; lychee have been identified. Methional (baked potato) and geraniol (sweet, floral) are the most potent odorants, followed by furaneol (sweet, caramel), lenerol (floral, sweet), dimethyl trisulphide (preserved vegetable, sulphide), linalool (floral), (E, Z)-2,6 nonadienal (cucumber), and nerolidol (metal, sesame oil) (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29567218\/\"><span style=\"font-weight: 400;\">Feng, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In addition, the flavour profile of &#8216;Sweetheart&#8217; lychee has been described by sensory analysis. <\/span><b>Floral, tropical fruit, peach\/apricot and honey notes <\/b><span style=\"font-weight: 400;\">scored relatively high (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29567218\/\"><span style=\"font-weight: 400;\">Feng, 2018)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">This fruit is an <\/span><b>excellent source of nutrients<\/b><span style=\"font-weight: 400;\">, namely vitamin C and polyphenols (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23547657\/\"><span style=\"font-weight: 400;\">Pandey, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>phenolic profile of lychee pulp <\/b><span style=\"font-weight: 400;\">of 13 different varieties was studied. Lychee pulp contains 101.51 to 259.18 mg gallic acid equivalent per 100 g fruit (total polyphenols) and 39.43 to 129.86 mg catechin equivalent per 100 g fruit (total flavonoids). However, the concentration of these compounds varies depending on the variety of lychee (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23194511\/\"><span style=\"font-weight: 400;\">Zhang, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>main phenolic compounds <\/b><span style=\"font-weight: 400;\">in &#8220;Chinensis&#8221; lychee pulp are quercetin 3-O-rutinoside-7-O-\u03b1-L-rhamnosidase (quercetin 3-rut-7-rha), rutin and epicatechin.
