The yellow-skinned &#8216;Arka Anmol&#8217; cultivars are reported to have higher post-ripening carotenoid contents, mostly <\/span><b>\u03b2-carotene <\/b><span style=\"font-weight: 400;\">and <\/span><b>violaxanthin<\/b><span style=\"font-weight: 400;\">, while the red-skinned &#8216;Janardhan Pasand&#8217; cultivars are reported to have higher <\/span><b>anthocyanin <\/b><span style=\"font-weight: 400;\">contents, mainly cyanidin-3-O-monoglucosides and peonidin-3-O-glucosides (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28643121\/\"><span style=\"font-weight: 400;\">Karanjalker, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">An Indian team characterised the pigment profiles of mango skin during ripening. \u03b2-carotene, violaxanthin and cis-\u03b2-carotene were the major <\/span><b>carotenoid <\/b><span style=\"font-weight: 400;\">pigments that significantly increased during ripening, while <\/span><b>anthocyanin <\/b><span style=\"font-weight: 400;\">pigments of cyanidin, peonidin, petunidin, delphinidin and pelargonidin groups showed no difference. Moreover, <\/span><b>chlorophyll <\/b><span style=\"font-weight: 400;\">degradation was observed during fruit ripening (Ranganath, 2018).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fruit <\/span><b>firmness <\/b><span style=\"font-weight: 400;\">is also an indicator of fruit ripeness: the less firm the fruit, the closer it is to ripeness (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22778629\/\"><span style=\"font-weight: 400;\">Zakaria, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>aroma of the <\/b><span style=\"font-weight: 400;\">&#8216;Alphonso&#8217;<\/span><b> mango <\/b><span style=\"font-weight: 400;\">cultivar is characterised by 26 volatile molecules (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23122101\/\"><span style=\"font-weight: 400;\">Chidley, 2013<\/span><\/a><span style=\"font-weight: 400;\">), including 2 belonging to the furanone family: furaneol and mesifuran (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\"><span style=\"font-weight: 400;\">Kulkarni, 2013a<\/span><\/a><span style=\"font-weight: 400;\">). Compared to other fruits, mango is reported to have the highest concentration of these 2 components (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\"><span style=\"font-weight: 400;\">Kulkarni, 2013a<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Mango flavour <\/b><span style=\"font-weight: 400;\">is thought to be attributable to volatile compounds such as fruity esters, including 1-octanol, (E, Z)-2,6-nonadienal and \u03b3-octalactone. On the other hand, the &#8220;green&#8221; turpentine-like flavor is reportedly correlated with high terpene levels (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30977646\/\"><span style=\"font-weight: 400;\">Sung<\/span><\/a><span style=\"font-weight: 400;\">, 2019) that increase during ripening (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23122101\/\"><span style=\"font-weight: 400;\">Chidley, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Mango taste <\/b><span style=\"font-weight: 400;\">may vary depending on the geographical area and climate in which the fruit is grown (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Kulkarni, 2013b<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">An Italian team sought to characterise the <\/span><b>polyphenol <\/b><span style=\"font-weight: 400;\">and <\/span><b>carotenoid <\/b><span style=\"font-weight: 400;\">content of mango pulp. The polyphenols identified were mangiferin, gallic acid, gallotannins, quercetin, isoquercetin, ellagic acid and \u03b2-glucogallin. Gallic acid was the most represented phenolic compound in this fraction (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\"><span style=\"font-weight: 400;\">Lauricella, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Mango pulp is reported to contain other polyphenols such as <\/span><b>phenolic acids <\/b><span style=\"font-weight: 400;\">including chlorogenic, vanillic, and ferulic acid (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28786116\/\"><span style=\"font-weight: 400;\">Vithana, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Mango pulp is particularly rich in <\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">. Up to 25 carotenoids have been identified such as <\/span><b>provitamin A (or \u03b2-carotene)<\/b><span style=\"font-weight: 400;\">, <\/span><b>lutein <\/b><span style=\"font-weight: 400;\">and <\/span><b>\u03b1-carotene <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\"><span style=\"font-weight: 400;\">Lauricella, 2017<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/link.springer.com\/article\/10.1007\/s13197-018-3392-7\"><span style=\"font-weight: 400;\">Ranganath, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">and <\/span><b>phenolic compounds <\/b><span style=\"font-weight: 400;\">in<\/span> <span style=\"font-weight: 400;\">mango are reported to have <\/span><b>antioxidant <\/b><span style=\"font-weight: 400;\">and<\/span><b> anti-inflammatory <\/b><span style=\"font-weight: 400;\">effects, conferring health benefits and limiting the development of cardiovascular diseases, type 2 diabetes, metabolic syndromes and cancer for example (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\"><span style=\"font-weight: 400;\">Lauricella, 2017<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/9781119534167.ch6\"><span style=\"font-weight: 400;\">Wall-Medrano, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Antioxidant <\/b>content (ascorbic acid and total phenols) and functional factors of mango vary among cultivars.
