The <\/span><b>mogette de Vend\u00e9e<\/b><span style=\"font-weight: 400;\">, the <\/span><b>lingot du Nord <\/b><span style=\"font-weight: 400;\">and the <\/span><b>haricot tarbais <\/b><span style=\"font-weight: 400;\">have\u00a0 protected geographical indication (<\/span><a href=\"https:\/\/dumas.ccsd.cnrs.fr\/dumas-00741818\/document\"><span style=\"font-weight: 400;\">Mac\u00e9, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The navy bean is <\/span><b>ivory in colour with an oval, slightly flattened shape <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"http:\/\/www.fao.org\/documents\/card\/fr\/c\/0cf730b3-b1b9-4590-978d-168d9ac1f3a1\/\"><span style=\"font-weight: 400;\">FAO, 2016a), <\/span><\/a><span style=\"font-weight: 400;\">of which <\/span><b>only the seeds are edible<\/b><span style=\"font-weight: 400;\">. The seeds are harvested when the pods are ripe and semi-dry (<\/span><a href=\"https:\/\/dumas.ccsd.cnrs.fr\/dumas-00741818\/document\"><span style=\"font-weight: 400;\">Mac\u00e9, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Navy beans are a slow-digesting <\/span><b>legume<\/b><span style=\"font-weight: 400;\">, providing a <\/span><b>feeling of satiety<\/b><span style=\"font-weight: 400;\">. Their <\/span><b>high fibre content <\/b><span style=\"font-weight: 400;\">can lead to flatulence and bloating. These intestinal disorders can be improved by cooking with bicarbonate (<\/span><a href=\"http:\/\/www.fao.org\/resources\/infographics\/infographics-details\/fr\/c\/429901\/\"><span style=\"font-weight: 400;\">FAO, 2016b<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The storage time of the navy bean as well as its cooking method influences the volatile compounds produced during cooking and consequently the taste of the bean. Beans that have been stored for a longer period of time contain more cooking-sensitive volatile compounds than fresh beans (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30724191\/\"><span style=\"font-weight: 400;\">Chigdewere, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li><span style=\"font-weight: 400;\">An Italian study found the <\/span><b>presence of alkaloids, saponins, flavonoids and terpenoids <\/b><span style=\"font-weight: 400;\">in navy beans.
