<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20178390\/\"><span style=\"font-weight: 400;\">Rao, 2010<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18931913\/\"><span style=\"font-weight: 400;\">Szajdek, 2008<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Raspberries range in colour from dark purple to yellow (<\/span><a href=\"https:\/\/www.frontiersin.org\/articles\/10.3389\/fpls.2016.01892\/full\"><span style=\"font-weight: 400;\">Rafique, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Anthocyanins <\/b><span style=\"font-weight: 400;\">and <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">are considered to be the <\/span><b>main pigments involved in raspberry colouration <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.frontiersin.org\/articles\/10.3389\/fpls.2016.01892\/full\"><span style=\"font-weight: 400;\">Rafique, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">While red raspberries owe their colour to anthocyanins, mainly cyanidin derivatives (<\/span><a href=\"https:\/\/novaresearch.unl.pt\/en\/publications\/on-the-red-colour-of-raspberry-rubus-idaeus-2\"><span style=\"font-weight: 400;\">Melo, 2000<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23132011\/\"><span style=\"font-weight: 400;\">Snyder, 2012<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18931913\/\"><span style=\"font-weight: 400;\">Szajdek, 2008<\/span><\/a><span style=\"font-weight: 400;\">), yellow varieties owe their colour to carotenoids, mostly lutein, but especially to the absence of anthocyanins (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23561169\/\"><span style=\"font-weight: 400;\">Carvalho, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The composition of carotenoids, chlorophyll derivatives, and tocopherols has been studied in raspberries. The results indicate a <\/span><b>radical change in the pigment profile during ripening<\/b><span style=\"font-weight: 400;\">, with a very significant reduction in \u03b2-carotene and chlorophyll derivatives, while lutein (xanthophyll) decreases but to a lesser extent. On the other hand, esterified lutein increases. This composition may vary depending on variety and other factors such as environmental conditions (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23561169\/\"><span style=\"font-weight: 400;\">Carvalho, 2013)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The raspberry is also known to be a fragrant and tart berry. Among the main volatile aroma compounds of raspberry, there are mainly C<\/span><span style=\"font-weight: 400;\">6<\/span><span style=\"font-weight: 400;\"> compounds ((Z)-hexenol, hexanal, (E)-2-hexenal, etc.), lactones, (\u03b4-octalactone, \u03b4-decalactone, etc.) and terpene derivatives (geraniol, \u03b1-ionone, \u03b2-ionone, terpinen-4-ol, etc.) (<\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4867754\/\"><span style=\"font-weight: 400;\">Hansen, 2016)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Ketone compounds have also been identified. Among them, 4-(4-hydroxyphenyl)butan-2-one, better known as raspberry ketone, is believed to be the source of the characteristic aroma of this fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21802408\/\"><span style=\"font-weight: 400;\">Koeduka, 2011<\/span><\/a><span style=\"font-weight: 400;\">). This compound is also designated as a synthetic flavouring agent by the US Food and Drug Administration (<\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6823123\/\"><span style=\"font-weight: 400;\">Kshatriya, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Red raspberry is <\/span><b>rich in anthocyanins<\/b><span style=\"font-weight: 400;\">, whose <\/span><b>potential effects on obesity, chemoprevention, inflammation and immune regulation <\/b><span style=\"font-weight: 400;\">have been demonstrated by several scientific works (<\/span><a href=\"https:\/\/www.x-mol.com\/paper\/1235361347327062016?adv\"><span style=\"font-weight: 400;\">Teng, 2017<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29632909\/\"><span style=\"font-weight: 400;\">Wu, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Following raspberry consumption, <\/span><b>two novel triterpenoids<\/b><span style=\"font-weight: 400;\">, described to have <\/span><b>potential anticancer activities<\/b><span style=\"font-weight: 400;\">, have been found in ileal fluids, indicating their availability to the colon <\/span><i><span style=\"font-weight: 400;\">in vivo <\/span><\/i><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/mnfr.201600327\"><span style=\"font-weight: 400;\">McDougall, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Researchers have shown for the first time that raspberry metabolites present in the gastrointestinal fraction appear to protect neuronal and microglial cells against oxidative stress and inflammation.
