There are\u00a0<\/span><b>six<\/b><span style=\"font-weight: 400;\">\u00a0<\/span><b>edible<\/b><span style=\"font-weight: 400;\">\u00a0<\/span><b>forms <\/b><span style=\"font-weight: 400;\">of lettuce: batavia, romaine, butterhead,\u00a0<\/span><b>leaf<\/b><span style=\"font-weight: 400;\">, latin and stem (<\/span><a href=\"https:\/\/www.cabi.org\/bookshop\/book\/9780851992853\/\"><span style=\"font-weight: 400;\">Ryder, 1999<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">All types of lettuce, except the \u201ccrisp\u201d batavia type, may have red and green leaves (<\/span><a href=\"https:\/\/hort.purdue.edu\/newcrop\/ncnu02\/pdf\/ryder.pdf\"><span style=\"font-weight: 400;\">Ryder, 2002<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">One study indicated that the CHS, F3H and DFR genes, present in lettuce, coincided with an increase in anthocyanin accumulation during red leaf colouring (<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/6711541_Genes_up-regulated_during_red_coloration_in_UV-B_irradiated_lettuce_leaves\"><span style=\"font-weight: 400;\">Park, 2006<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lettuce is one of the most widely consumed vegetables in the world. It is a good\u00a0<\/span><b>source of bioactive compounds<\/b><span style=\"font-weight: 400;\">, which are\u00a0<\/span><b>beneficial to health<\/b><span style=\"font-weight: 400;\">, such as\u00a0<\/span><b>folate<\/b><span style=\"font-weight: 400;\">,<\/span><b>\u00a0\u03b2-carotene<\/b><span style=\"font-weight: 400;\">,\u00a0<\/span><b>lutein<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>phenols<\/b><span style=\"font-weight: 400;\">.\u00a0<\/span><i><span style=\"font-weight: 400;\">In vitro<\/span><\/i><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><i><span style=\"font-weight: 400;\">in vivo <\/span><\/i><span style=\"font-weight: 400;\">studies have shown\u00a0<\/span><b>anti-inflammatory, cholesterol-lowering and anti-diabetic<\/b><span style=\"font-weight: 400;\">\u00a0activities attributed to these compounds. Nevertheless, they vary according to the type of lettuce (<\/span><a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\"><span style=\"font-weight: 400;\">Kim, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lettuce is also said to have protective effects on <\/span><b>cardiovascular health<\/b><span style=\"font-weight: 400;\"> due to its many varieties of bioactive components. These components reportedly prevent tissue oxidation and participate in the\u00a0<\/span><b>lowering of blood pressure and mitigation of myocardial damage<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28796173\/\"><span style=\"font-weight: 400;\">Tang, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A total of<\/span><b>\u00a0115 phenolic compounds<\/b><span style=\"font-weight: 400;\">\u00a0have been identified in green and red oak leaf lettuce. Red and green varieties showed similar phenolic composition, except for:<\/span>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><span style=\"font-weight: 400;\">apigenin glucuronide (flavonoid) and dihydroxybenzoic acid (phenolic acid), detected only in the green cultivar;<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"2\"><span style=\"font-weight: 400;\">luteolin-hydroxymalonylhexoside (flavonoid) and cyanidin-3-O-glucoside (anthocyanin) found only in the red cultivar (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28833875\/\"><span style=\"font-weight: 400;\">Viacava, 2017<\/span><\/a><span style=\"font-weight: 400;\">)<\/span><\/li>\n<\/ul>\n<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Thus, oak leaf lettuce represents a\u00a0<\/span><b>significant source of antioxidants<\/b><span style=\"font-weight: 400;\">\u00a0due to its richness in phenolic compounds (<\/span><a href=\"https:\/\/www.nature.com\/articles\/s41438-018-0050-1\"><span style=\"font-weight: 400;\">Yang, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In addition, <\/span><b>antioxidant activity<\/b><span style=\"font-weight: 400;\">\u00a0appears to be higher in\u00a0<\/span><b>red lettuce leaves<\/b><span style=\"font-weight: 400;\">.
