The fruit contains <\/span><b>many seeds<\/b><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Betalains <\/b><span style=\"font-weight: 400;\">present in the skin and pulp of prickly pear are the <\/span><b>pigments <\/b><span style=\"font-weight: 400;\">that give it its <\/span><b>colour, <\/b><span style=\"font-weight: 400;\">ranging from yellow to purple (<\/span><a href=\"https:\/\/core.ac.uk\/download\/pdf\/82633466.pdf\"><span style=\"font-weight: 400;\">Khatabi, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A Spanish team characterised the volatile profiles of the pulp of six prickly pear cultivars (NT, NE, NO, NA, FR, and ORI). A total of <\/span><b>35 compounds <\/b><span style=\"font-weight: 400;\">were identified, with <\/span><b>aldehydes<\/b><span style=\"font-weight: 400;\">, <\/span><b>alcohols <\/b><span style=\"font-weight: 400;\">and <\/span><b>terpenes <\/b><span style=\"font-weight: 400;\">being the predominant families. Esters, ketones, linear hydrocarbons and terpenoids were also found (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31961949\/\"><span style=\"font-weight: 400;\">Andreu-Coll, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Prickly pear is characterised by a &#8220;<\/span><b>sweet<\/b><span style=\"font-weight: 400;\">&#8221; and &#8220;<\/span><b>bitter&#8221; taste <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0925521415301332\"><span style=\"font-weight: 400;\">Ochoa-Velasco, 2016<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/academicjournals.org\/journal\/AJAR\/article-full-text-pdf\/C0B930F67132\"><span style=\"font-weight: 400;\">Nunes, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Plants of the <\/span><i><span style=\"font-weight: 400;\">Opuntia <\/span><\/i><span style=\"font-weight: 400;\">genus exhibit <\/span><b>health-promoting <\/b><span style=\"font-weight: 400;\">properties resulting mainly from their <\/span><b>high content of antioxidants <\/b><span style=\"font-weight: 400;\">(flavonoids, ascorbate), <\/span><b>pigments <\/b><span style=\"font-weight: 400;\">(carotenoids, betalains) and <\/span><b>phenolic acids <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28491239\/\"><span style=\"font-weight: 400;\">Del Socorro, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Containing notable amounts of phenolic compounds with antioxidant properties but also <\/span><b>nutrients<\/b><span style=\"font-weight: 400;\">, <\/span><b>fibre <\/b><span style=\"font-weight: 400;\">and <\/span><b>minerals<\/b><span style=\"font-weight: 400;\">, prickly pear is said to be beneficial in fighting <\/span><b>atherosclerosis, diabetes, <\/b><span style=\"font-weight: 400;\">indigestion<\/span><b>, inflammation <\/b><span style=\"font-weight: 400;\">and other immune-related symptoms (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30380747\/\"><span style=\"font-weight: 400;\">Jeong, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>polyphenols <\/b><span style=\"font-weight: 400;\">and <\/span><b>betalains <\/b><span style=\"font-weight: 400;\">contained in prickly pear give it its <\/span><b>antioxidant properties. <\/b><span style=\"font-weight: 400;\">However, its polyphenol content reportedly depends on the variety: in particular, <\/span><b>red prickly pear <\/b><span style=\"font-weight: 400;\">is thought to have a <\/span><b>higher polyphenol content <\/b><span style=\"font-weight: 400;\">than <\/span><b>yellow prickly pear <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/core.ac.uk\/download\/pdf\/82633466.pdf\"><span style=\"font-weight: 400;\">Khatabi, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Betalains<\/b><span style=\"font-weight: 400;\">, consisting of betacyanins and betaxanthins, are reported to be <\/span><b>beneficial <\/b><span style=\"font-weight: 400;\">in <\/span><b>diseases related to oxidative stress<\/b><span style=\"font-weight: 400;\">, <\/span><b>inflammation <\/b><span style=\"font-weight: 400;\">and <\/span><b>dyslipidemia<\/b><span style=\"font-weight: 400;\">, such as artery stenosis, atherosclerosis, hypertension and cancer (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29846082\/\"><span style=\"font-weight: 400;\">Rahimi, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Prickly pear is also reported to exhibit <\/span><b>estrogenic activities<\/b><span style=\"font-weight: 400;\">1<\/span> <span style=\"font-weight: 400;\">due to the presence of flavonoid phytoestrogens such as isorhamnetin, kaempferol and quercetin (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30380747\/\"><span style=\"font-weight: 400;\">Jeong, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">At the <b>seed <\/b>level, extensive analysis revealed the presence of <b>calcium <\/b>(471.2 mg\/kg), <b>potassium <\/b>(532.7 mg\/kg), <b>magnesium <\/b>(117.3 mg\/kg) and <b>phosphorus <\/b>(1627.5 mg\/kg) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21391790\/\">\u00d6zcan, 2011<\/a>).<\/li>\n<\/ul>\n","references":"<ul>\n<li style=\"text-align: left;\">Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail.
