2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Spinach can be found in different colours ranging from\u00a0<\/span><b>yellowish green<\/b><span style=\"font-weight: 400;\">\u00a0to\u00a0<\/span><b>dark green<\/b><span style=\"font-weight: 400;\">\u00a0(Kumar Sa, 2017) due to its content of\u00a0<\/span><b>chlorophyll<\/b><span style=\"font-weight: 400;\">\u00a0a and b (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16212792\/\"><span style=\"font-weight: 400;\">Kidmose, 2005<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Spinach has a characteristic odour, with a\u00a0<\/span><b>sweet taste<\/b><span style=\"font-weight: 400;\">\u00a0and a\u00a0<\/span><b>smooth texture<\/b><span style=\"font-weight: 400;\">\u00a0(Kumar Sa, 2017).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">When grown in\u00a0<\/span><b>spring conditions<\/b><span style=\"font-weight: 400;\">, spinach is <\/span><b>richer in total phenols<\/b><span style=\"font-weight: 400;\">\u00a0than when grown in\u00a0<\/span><b>winter conditions<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24700092\/\"><span style=\"font-weight: 400;\">Conversa, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">This green leafy vegetable is rich in\u00a0<\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>folic acid<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/317761979_Draft_genome_of_spinach_and_transcriptome_diversity_of_120_Spinacia_accessions\"><span style=\"font-weight: 400;\">Xu, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The majority carotenoids present are lutein and \u03b2-carotene. Their synthesis is closely linked to the synthesis of chlorophyll (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22607490\/\"><span style=\"font-weight: 400;\">Reif, 2012<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Lutein<\/b><span style=\"font-weight: 400;\"> is a xanthophyll involved in the prevention of age-related <\/span><b>macular degeneration<\/b><span style=\"font-weight: 400;\">.
