major part of the Asian diet (<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/316667008_Nutritional_and_Therapeutic_Potential_of_Allium_Vegetables\"><span style=\"font-weight: 400;\">Upadhyay, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The bulb of shallots is darker in colour than that of <\/span><b>garlic<\/b><span style=\"font-weight: 400;\">\u00a0and has a stronger odour, correlated with its content of\u00a0<\/span><b>sulphur compounds<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18299719\/\"><span style=\"font-weight: 400;\">Jalal, 2007<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Compared to onion, shallot also has a stronger odour due to the higher amount of sulphur compounds (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31421664\/\"><span style=\"font-weight: 400;\">Arpornchayanon, 2019<\/span><\/a><span style=\"font-weight: 400;\">) and has a richer, sweeter, and more powerful flavour (<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/337137170_The_insight_and_survey_on_medicinal_properties_and_nutritive_components_of_Shallot\"><span style=\"font-weight: 400;\">Sun, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Comparing the\u00a0<\/span><b>volatile compounds<\/b><span style=\"font-weight: 400;\">\u00a0present in onion and shallot, the main ones identified in both are dipropyldisulphide and allylpropyldisulphide. 2-Methyl-2-pentenal is found only in shallots. The latter is a compound with an <\/span><b>intense fruity aroma<\/b><span style=\"font-weight: 400;\">, which may explain the differences in aromas between onion and shallot (<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/319199935_HS-SPME-GC-MS_analysis_of_onion_Allium_cepa_L_and_shallot_allium_ascalonicum_L\"><span style=\"font-weight: 400;\">D&#8217;Auria, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In addition, the contents of\u00a0<\/span><b>flavonoids<\/b><span style=\"font-weight: 400;\">\u00a0and S-(1-propenyl)-L-cysteine sulphide are higher in shallot than in onion, which explains the more prominent<\/span><b>\u00a0pungent and bitter taste<\/b><span style=\"font-weight: 400;\"> of shallots (<\/span><a href=\"https:\/\/www.jstage.jst.go.jp\/article\/hortj\/87\/1\/87_OKD-066\/_article\"><span style=\"font-weight: 400;\">Ariyanti, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Shallots contain organic polysulphides, including\u00a0<\/span><b>hydrogen sulphide,<\/b><span style=\"font-weight: 400;\"> which is gaining increasing attention for its <\/span><b>cardiovascular health benefits<\/b><span style=\"font-weight: 400;\">. However, these organosulphides are reportedly<\/span><b>\u00a0sensitive to heat and pH<\/b><span style=\"font-weight: 400;\">. One study showed that freeze-drying retains the majority of organosulphides while autoclaving and boiling results in 95% loss (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24840922\/\"><span style=\"font-weight: 400;\">Tocmo, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Shallots also contain\u00a0<\/span><b>polyphenols<\/b><span style=\"font-weight: 400;\">, including\u00a0<\/span><b>flavonoids<\/b><span style=\"font-weight: 400;\">, the main one being<\/span><b>\u00a0quercetin<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24551817\/\"><span style=\"font-weight: 400;\">Farhadi, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A Thai study has also highlighted the presence in shallots of other<\/span><b>\u00a0polyphenols,<\/b><span style=\"font-weight: 400;\">\u00a0in addition to quercetin, such as apigenin, gallic acid, kaempferol and tannic acid, which are thought to be responsible for their<\/span><b>\u00a0antifungal properties<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S2452316X16302307\"><span style=\"font-weight: 400;\">Patchawaran, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">The presence of a steroidal saponi,\u00a0Cepa2, with a structure identical to alliospiroside A saponin, has been identified in shallots.
