It is commonly consumed as a vegetable.<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The fruits are usually harvested <\/span><b>one to two weeks after flowering <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24962999\/\"><span style=\"font-weight: 400;\">Chen, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During fruit development, deep veins along the length cover the surface of the fruit and spaced, dense spines are randomly scattered relative to the veins (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24962999\/\"><span style=\"font-weight: 400;\">Chen, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cucumber is a fruit with a <\/span><b>firm texture <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31340498\/\"><span style=\"font-weight: 400;\">Miao, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The pigments responsible for the <\/span><b>colour <\/b><span style=\"font-weight: 400;\">of<\/span> <span style=\"font-weight: 400;\">cucumber are <\/span><b>chlorophylls a and b <\/b><span style=\"font-weight: 400;\">and <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32150913\/\"><span style=\"font-weight: 400;\">Shan, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>odour of cucumber <\/b><span style=\"font-weight: 400;\">is<\/span> <span style=\"font-weight: 400;\">characterised by the presence of 2-acetyl-1-pyrroline, aldehydes and alcohols (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23640420\/\"><span style=\"font-weight: 400;\">Pramnoi, 2013<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24213607\/\"><span style=\"font-weight: 400;\">Wan, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The sweetness and <\/span><b>sugary taste <\/b><span style=\"font-weight: 400;\">of cucumber is provided by <\/span><b>soluble sugars <\/b><span style=\"font-weight: 400;\">and in particular <\/span><b>fructose<\/b><span style=\"font-weight: 400;\">, while its <\/span><b>astringency <\/b><span style=\"font-weight: 400;\">comes from <\/span><b>tannin compounds <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31340498\/\"><span style=\"font-weight: 400;\">Miao, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Catechins <\/b><span style=\"font-weight: 400;\">(Cs) are the main astringent tannins that affect the oral sensory quality of cucumber fruits (<\/span><a href=\"https:\/\/link.springer.com\/article\/10.1007%2Fs11738-019-2925-7\"><span style=\"font-weight: 400;\">Xu, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The aroma profile of cucumber is characterised by <\/span><b>short and medium chain alcohols and aldehydes<\/b><span style=\"font-weight: 400;\">, <\/span><b>carotenoid and monoterpene derivatives<\/b><span style=\"font-weight: 400;\">, and\u00a0 sesquiterpenes as well as benzoids (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31340498\/\"><span style=\"font-weight: 400;\">Miao, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cucumbers contain high levels of <\/span><b>cucurbitacins <\/b><span style=\"font-weight: 400;\">and their derivatives (triterpenoids) and <\/span><b>flavonoids <\/b><span style=\"font-weight: 400;\">(apigenin, luteolin, quercetin and kaempferol) (<\/span><a href=\"https:\/\/www.jarlife.net\/3050-evaluating-the-potential-benefits-of-cucumbers-for-improved-health-and-skin-care.html\"><span style=\"font-weight: 400;\">Murad, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">One study found that <\/span><b>cucumber skin <\/b><span style=\"font-weight: 400;\">extract contained the highest levels of <\/span><b>phenolic compounds and flavonoids<\/b><span style=\"font-weight: 400;\">, as well as <\/span><b>higher antioxidant properties <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/sciendo.com\/article\/10.2478\/aucft-2018-0008\"><span style=\"font-weight: 400;\">Yunusa, 2019<\/span><\/a><span style=\"font-weight: 400;\">). These results suggest that consuming cucumber with the skin on may offer more optimal health benefits than its peeled counterpart.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Nigerian researchers studied the effect of cucumber consumption on plasma creatinine (Cr), urea, uric acid (Ua) and blood glucose in young students. They observed a <\/span><b>hypoglycaemic effect <\/b><span style=\"font-weight: 400;\">following cucumber consumption with no adverse effect on the kidneys, which may be useful in the prevention and management of type 2 diabetes (<\/span><a href=\"https:\/\/www.ajol.info\/index.php\/ijbair\/article\/view\/174918\"><span style=\"font-weight: 400;\">Ogbodo, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Catechins <\/b>(Cs), present in cucumber, have potential health benefits, particularly in <b>improving chronic diseases<\/b>.
