style=\"font-weight: 400;\">Orhan, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Quince is a <\/span><b>small <\/b><span style=\"font-weight: 400;\">(5-8 m high and 4-6 m wide) <\/span><b>deciduous <\/b><span style=\"font-weight: 400;\">tree (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24535871\/\"><span style=\"font-weight: 400;\">Orhan, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Its fruit resembles apples and pears, <\/span><b>bright yellow in colour when ripe <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24535871\/\"><span style=\"font-weight: 400;\">Orhan, 2014<\/span><\/a><span style=\"font-weight: 400;\">), 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Polyphenol oxidase <\/b><span style=\"font-weight: 400;\">is the <\/span><b>enzyme responsible for the browning <\/b><span style=\"font-weight: 400;\">of<\/span> <span style=\"font-weight: 400;\">quince during ripening (<\/span><a href=\"https:\/\/ifst.onlinelibrary.wiley.com\/doi\/abs\/10.1111\/jfpp.14366\"><span style=\"font-weight: 400;\">Yildiz, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Quince contains notable amounts of <\/span><b>phenolic compounds<\/b><span style=\"font-weight: 400;\">, such as <\/span><b>flavonoids and phenolic acids<\/b><span style=\"font-weight: 400;\">, and secondary metabolites, such as <\/span><b>procyanidins<\/b><span style=\"font-weight: 400;\">, shikimic acids and quinic acids (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30014572\/\"><span style=\"font-weight: 400;\">Sut, 2019<\/span><\/a><span style=\"font-weight: 400;\">).
