It reportedly contains 29 different ones with a majority of <\/span><b>cyanide glycosides <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31576890\/\"><span style=\"font-weight: 400;\">Fenger, 2019<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31387047\/\"><span style=\"font-weight: 400;\">Strauch, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">To obtain this red colour, the anthocyanins must be acylated. Coumaric acid, sinapic acid and caffeic acid, <\/span><b>phenolic acids present in red cabbage<\/b><span style=\"font-weight: 400;\">, are responsible for this acylation. These biologically active compounds are beneficial for the <\/span><b>prevention of certain diseases <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28701702\/\"><span style=\"font-weight: 400;\">Wu, 2017<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30363947\/\"><span style=\"font-weight: 400;\">Dal, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Among these anthocyanins, there are also volatile compounds such as <\/span><b>glucosinolates <\/b><span style=\"font-weight: 400;\">and its degradation products: <\/span><b>isothiocyanates, nitriles, sulfides and aldehydes<\/b><span style=\"font-weight: 400;\">. These compounds impart a <\/span><b>bitter <\/b><span style=\"font-weight: 400;\">and sometimes unpleasant <\/span><b>aroma <\/b><span style=\"font-weight: 400;\">to red cabbage (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30583391\/\"><span style=\"font-weight: 400;\">M\u00fcller-Maatsch, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Red cabbage contains <\/span><b>anthocyanins <\/b><span style=\"font-weight: 400;\">which exhibit <\/span><b>antioxidant, antimicrobial, antimutagenic and anti-inflammatory properties<\/b><span style=\"font-weight: 400;\">.
