<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30609768\/\"><span style=\"font-weight: 400;\">Viera, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>bitterness <\/b><span style=\"font-weight: 400;\">of<\/span> <span style=\"font-weight: 400;\">Brussels sprouts is caused by <\/span><b>glucosinolates<\/b><span style=\"font-weight: 400;\">, sulfur compounds that bind to bitter receptors located on taste bud cells (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30387878\/\"><span style=\"font-weight: 400;\">Carpenter, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Brussels sprouts are an important source of glucosinolates and their derivatives: <\/span><b>isothiocyanates <\/b><span style=\"font-weight: 400;\">(ITC). Each glucosinolate is transformed into a different ITC such as sulforaphane, phenylethyl isothiocyanates and allyl isothiocyanates. These ITCs are thought to exhibit <\/span><b>anti-carcinogenic properties <\/b><span style=\"font-weight: 400;\">via inhibition of genes that promote tumour formation (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29333389\/\"><span style=\"font-weight: 400;\">Hwang, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">These cruciferous vegetables are also a good source of <\/span><b>phenolic compounds, flavonoids and carotenoids<\/b><span style=\"font-weight: 400;\">. These give them the ability to fight <\/span><b>oxidative stress<\/b><span style=\"font-weight: 400;\">, <\/span><b>cancers<\/b><span style=\"font-weight: 400;\">, <\/span><b>cardiovascular diseases<\/b><span style=\"font-weight: 400;\">, <\/span><b>diabetes <\/b><span style=\"font-weight: 400;\">and <\/span><b>hypertension <\/b><span style=\"font-weight: 400;\">and <\/span><b>regulate cholesterol levels <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29333389\/\"><span style=\"font-weight: 400;\">Hwang, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">They contain a significant amount of <\/span><b>chlorophyll<\/b><span style=\"font-weight: 400;\">, which can <\/span><b>block the carcinogenic effects <\/b><span style=\"font-weight: 400;\">of heterocyclic amines generated when grilling meats at high temperatures (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29333389\/\"><span style=\"font-weight: 400;\">Hwang, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">The <b>cooking method <\/b>has an influence on the polyphenol content.
