The Emma K cultivar had a taste, according to the panel, of burnt, black fruit, as well as being earthy, musty, rancid, pungent and bitter (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23627833\/\"><span style=\"font-weight: 400;\">Miller, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The\u00a0<\/span><b>sensory profile<\/b><span style=\"font-weight: 400;\">\u00a0of the walnut is influenced by its degree of ripeness (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29085121\/\"><span style=\"font-weight: 400;\">Amin, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Rich in\u00a0<\/span><b>mono and polyunsaturated fatty acids<\/b><span style=\"font-weight: 400;\">, <\/span><b>proteins<\/b><span style=\"font-weight: 400;\">, <\/span><b>fibres<\/b><span style=\"font-weight: 400;\">, <\/span><b>vitamins E and K<\/b><span style=\"font-weight: 400;\">,\u00a0<\/span><b>minerals<\/b><span style=\"font-weight: 400;\">\u00a0(magnesium, potassium, selenium),\u00a0<\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>phytosterols<\/b><span style=\"font-weight: 400;\">, walnut has\u00a0<\/span><b>antioxidant <\/b><span style=\"font-weight: 400;\">properties. Its consumption is frequently associated with a decrease in risk factors for chronic diseases (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29207471\/\"><span style=\"font-weight: 400;\">de Souza, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In particular, regular walnut consumption is thought to have beneficial effects on <\/span><b>obesity<\/b><span style=\"font-weight: 400;\">, <\/span><b>hypertension<\/b><span style=\"font-weight: 400;\">,\u00a0<\/span><b>diabetes<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>cardiovascular disease<\/b><span style=\"font-weight: 400;\">, with a reduction in mediators of chronic diseases, such as oxidative stress, inflammation, visceral adiposity, hyperglyemia, insulin resistance and metabolic syndrome (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29207471\/\"><span style=\"font-weight: 400;\">de Souza, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Walnuts also contain polyphenols such as ellagic acid, genistein, resveratrol, and other bioactive compounds such as anacardic acid and inositol phosphate, which may reduce the risk of cancer by inducing apoptosis and inhibiting cell proliferation (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27916000\/\"><span style=\"font-weight: 400;\">Aune, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The\u00a0<\/span><b>main polyphenol<\/b><span style=\"font-weight: 400;\">\u00a0in walnuts is pedunculagin: an ellagitannin.
