There are <\/span><b>six edible forms of lettuce: batavia<\/b><span style=\"font-weight: 400;\">, <\/span><b>romaine<\/b><span style=\"font-weight: 400;\">, <\/span><b>butterhead<\/b><span style=\"font-weight: 400;\">, <\/span><b>leaf<\/b><span style=\"font-weight: 400;\">, <\/span><b>latin <\/b><span style=\"font-weight: 400;\">and <\/span><b>stem <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.cabi.org\/bookshop\/book\/9780851992853\/\"><span style=\"font-weight: 400;\">Ryder, 1999).<\/span><\/a><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Batavia is subdivided into two forms: the &#8220;European&#8221; type batavia, which is fairly undeveloped elsewhere, and the &#8220;crisp&#8221; type batavia, also known as &#8220;iceberg&#8221;, which is widely used in fast food restaurants (<\/span><a href=\"http:\/\/ephytia.inra.fr\/fr\/C\/6042\/Salades-Les-differents-types-de-laitues-cultivees\"><span style=\"font-weight: 400;\">B Maisonneuve, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">All types of lettuce, except the crisp type of batavia, can be found with red and green leaves (<\/span><a href=\"https:\/\/hort.purdue.edu\/newcrop\/ncnu02\/pdf\/ryder.pdf\"><span style=\"font-weight: 400;\">Ryder, 2002<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Batavia lettuce is apple-shaped, meaning that the young leaves are interlocking and more or less closed at the top. The crisp type of batavia has the particularity of being in the form of a hard apple, like a white cabbage, and of having very crunchy leaves (<\/span><a href=\"http:\/\/ephytia.inra.fr\/fr\/C\/6042\/Salades-Les-differents-types-de-laitues-cultivees\"><span style=\"font-weight: 400;\">B Maisonneuve, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Once cut, lettuce gradually <\/span><b>turns brown <\/b><span style=\"font-weight: 400;\">because cutting promotes the <\/span><b>biosynthesis of polyphenols <\/b><span style=\"font-weight: 400;\">that are <\/span><b>oxidised <\/b><span style=\"font-weight: 400;\">by <\/span><b>polyphenol oxidase <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.tandfonline.com\/doi\/abs\/10.1271\/bbb.68.501\"><span style=\"font-weight: 400;\">Murata, 2004<\/span><\/a><span style=\"font-weight: 400;\">). It has been demonstrated that crisp batavia lettuce cut and washed at 50\u00b0C has significantly lower polyphenol oxidase activity than lettuce cut and washed at 4\u00b0C and 25\u00b0C, throughout storage. These results are consistent with a sensory analysis in which the lowest browning scores were found in samples treated at 50\u00b0C (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16195584\/\"><span style=\"font-weight: 400;\">Martin-Diana, 2005<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Experiments have shown that under <\/span><b>anaerobic conditions<\/b><span style=\"font-weight: 400;\">, such as the storage atmosphere for packaged crisp batavia lettuce, <\/span><b>organic acids <\/b><span style=\"font-weight: 400;\">are produced by lactic acid bacteria. These acids affect the <\/span><b>sensory quality <\/b><span style=\"font-weight: 400;\">of<\/span> <span style=\"font-weight: 400;\">freshly cut crisp batavia, including rapid <\/span><b>browning<\/b><span style=\"font-weight: 400;\">, <\/span><b>yellowing<\/b><span style=\"font-weight: 400;\">, <\/span><b>unpleasant taste <\/b><span style=\"font-weight: 400;\">and <\/span><b>loss of texture <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/research.wur.nl\/en\/publications\/organic-acids-produced-by-lactic-acid-bacteria-leuconostoc-sp-con\"><span style=\"font-weight: 400;\">Paillart, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lettuce is one of the most widely consumed vegetables in the world. It is a good source of bioactive compounds with health benefits such as <\/span><b>folate<\/b><span style=\"font-weight: 400;\">, <\/span><b>\u03b2-carotene<\/b><span style=\"font-weight: 400;\">, <\/span><b>lutein <\/b><span style=\"font-weight: 400;\">and <\/span><b>phenols<\/b><span style=\"font-weight: 400;\">. In vitro and in vivo studies have shown <\/span><b>anti-inflammatory<\/b><span style=\"font-weight: 400;\">, <\/span><b>cholesterol-lowering <\/b><span style=\"font-weight: 400;\">and <\/span><b>anti-diabetic <\/b><span style=\"font-weight: 400;\">activities attributed to these compounds. Nonetheless, they vary among different forms of lettuce: crisp-type batavia, the most popular in the United States, is relatively low in bioactive compounds (<\/span><a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\"><span style=\"font-weight: 400;\">Kim, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lettuce also has <\/span><b>protective effects <\/b><span style=\"font-weight: 400;\">on cardiovascular health due to its many <\/span><b>varieties <\/b><span style=\"font-weight: 400;\">of <\/span><b>bioactive components<\/b><span style=\"font-weight: 400;\">. They <\/span><b>prevent tissue oxidation <\/b><span style=\"font-weight: 400;\">and <\/span><b>participate in lowering blood pressure as well as mitigating myocardial damage <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28796173\/\"><span style=\"font-weight: 400;\">Tang, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The major phenolic compound in six lettuce cultivars studied, including two butterhead lettuces, two batavia lettuces, one leaf lettuce, and one red-pigmented oak leaf variety, was reported to be <\/span><b>dicafeyl tartaric acid<\/b><span style=\"font-weight: 400;\">. While total phenolics accounted for more than <\/span><b>60% of the total antioxidant capacity, <\/b><span style=\"font-weight: 400;\">dicafeyl tartaric acid accounted for <\/span><b>55% <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.1916\"><span style=\"font-weight: 400;\">Nicolle, 2004<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Batavia and 24 other lettuce varieties were grown over two harvest periods. It was shown that lettuces harvested in July had higher total polyphenol content and antioxidant capacity than lettuces harvested in September. These results suggest that environmental conditions may influence the polyphenol content and antioxidant activity of lettuces like batavia (<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0023643805002173\"><span style=\"font-weight: 400;\">Liu, 2007<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<p><i><span style=\"font-weight: 400;\">*Average composition given as an indication: the following values are approximate and depend on variety, season, ripeness, cultivation conditions, etc.<\/span><\/i> <i><span style=\"font-weight: 400;\">The data on polyphenols is taken from the Phenol-Explorer 3.0 database.
