The banana tree is thought to be native to the <\/span><b>islands of Southeast Asia <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24260405\/\"><span style=\"font-weight: 400;\">Li, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The main banana varieties are <\/span><b>Enano, Morado, Valery and Macho <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24299760\/\"><span style=\"font-weight: 400;\">Utrilla-Coello, 2014<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Covered with a <\/span><b>yellow skin that becomes mottled when ripe<\/b><span style=\"font-weight: 400;\">, it has <\/span><b>tender, sweet, very soft flesh <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.banane.info\/la-banane\/varietes\/bananes-dessert\/\"><span style=\"font-weight: 400;\">Association Interprofessionnelle de la Banane<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Factors such as an <\/span><b>increase in polyphenol oxidase <\/b><span style=\"font-weight: 400;\">(PPO) <\/span><b>enzyme<\/b><span style=\"font-weight: 400;\">, <\/span><b>pH, temperature and oxygen availability <\/b><span style=\"font-weight: 400;\">are likely to cause <\/span><b>browning of bananas<\/b><span style=\"font-weight: 400;\">. Browning affects the appearance, sensory properties (taste, smell and texture) and nutritional value of the fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28265353\/\"><span style=\"font-weight: 400;\">Bakare, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bananas are <\/span><b>high in starch<\/b><span style=\"font-weight: 400;\">, a complex sugar composed of <\/span><b>20% amylose and 80% amylopectin <\/b><span style=\"font-weight: 400;\">(Cordenunsi-Lysenko, 2019). During ripening, <\/span><b>the starch is converted to simple sugars <\/b><span style=\"font-weight: 400;\">(fructose, glucose and sucrose) that <\/span><b>give <\/b><span style=\"font-weight: 400;\">bananas <\/span><b>their sweet taste <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31891784\/\"><span style=\"font-weight: 400;\">Bhuiyan, 2020<\/span><\/a><span style=\"font-weight: 400;\">). This conversion provides energy for the processes responsible for colour change, synthesis of volatile compounds and softening of the flesh (Cordenunsi-Lysenko, 2019).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>starch content varies among different banana<\/b> <b>varieties, <\/b><span style=\"font-weight: 400;\">which are<\/span> <span style=\"font-weight: 400;\">very diverse (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31891784\/\"><span style=\"font-weight: 400;\">Bhuiyan, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Typical banana <\/span><b>flavour compounds<\/b><span style=\"font-weight: 400;\"> are<\/span><b> produced<\/b><span style=\"font-weight: 400;\"> during a short period of <\/span><b>ripening<\/b><span style=\"font-weight: 400;\">. The predominant volatile components vary across different banana cultivars, giving them their unique flavour. For example, the volatile 3-methylbutyl butanoate is the predominant ester in the Cavendish cultivar (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\"><span style=\"font-weight: 400;\">Zhu, 2018)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Generally, <\/span><b>esters<\/b><span style=\"font-weight: 400;\">, such as isoamyl butanoate, 3-methylbutyl acetate and isoamyl isovalerate give a <\/span><b>fruity flavour <\/b><span style=\"font-weight: 400;\">to bananas (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\"><span style=\"font-weight: 400;\">Zhu, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>246 volatile compounds <\/b><span style=\"font-weight: 400;\">have been identified in bananas, including 112 esters, 57 alcohols, 39 acids, 10 aldehydes and 10 ketones, but only 12 compounds are thought to contribute significantly to <\/span><b>their flavour <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\"><span style=\"font-weight: 400;\">Zhu, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The polysaccharide, \u03b1-(1 \u2192 6)-d-glucan, is highly present in bananas. It is believed to enhance the <\/span><b>immune system <\/b><span style=\"font-weight: 400;\">by increasing the proliferation or stimulating the cells involved in this system, namely T cells and macrophages (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30502171\/\"><span style=\"font-weight: 400;\">Yang, 2019)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Banana peel and flesh contain various <\/span><b>phenolic compounds<\/b><span style=\"font-weight: 400;\">, such as gallic acid (a hydroxybenzoic acid), catechin, epicatechin (flavanols), tannins and anthocyanins. In addition, the <\/span><b>total phenol content increases as bananas ripen<\/b><span style=\"font-weight: 400;\">, averaging 7 mg\/100 g of fresh weight.\u00a0 These phenolic compounds have a <\/span><b>protective role against free radicals responsible for ageing and various diseases <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27041291\/\"><span style=\"font-weight: 400;\">Singh, 2016)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Its <\/span><b>high starch content <\/b><span style=\"font-weight: 400;\">gives it <\/span><b>cholesterol-lowering properties <\/b><span style=\"font-weight: 400;\">as well as beneficial effects on <\/span><b>digestion and the gut<\/b><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bananas also contain <\/span><b>serotonin which helps prevent or overcome depression <\/b><span style=\"font-weight: 400;\">and relaxes the body (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27041291\/\"><span style=\"font-weight: 400;\">Singh, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n","references":"<ul>\n<li>Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail.
