Through natural hybridisation, other tomato varieties such as &#8220;la merveille des march\u00e9s&#8221;, &#8220;la ponderosa&#8221; and &#8220;mikado&#8221;, are thought to have given rise to the Marmande tomato, after adaptation to the climate and soil (<\/span><a href=\"https:\/\/www.atp-marmande.fr\/accueil\/uncategorised\/la-tomate-de-marmande\"><span style=\"font-weight: 400;\">ATP Marmande, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Contrary to popular belief, the tomato is a fruit, even if it is eaten as a vegetable.<\/b><span style=\"font-weight: 400;\">\u00a0It is available all year round, but the\u00a0<\/span><b>peak season is from July to September<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/www.produits-de-nouvelle-aquitaine.fr\/produit\/tomate-de-marmande\/\"><span style=\"font-weight: 400;\">L\u2019Agence de l\u2019alimentation Nouvelle-Aquitaine, 2021<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Of large size,\u00a0<\/span><b>the weight of the ribbed tomato can vary between 100 g and 300 g<\/b><span style=\"font-weight: 400;\">. It has firm flesh that can be cooked very well.\u00a0(Interfel, 2021). It can therefore be eaten stuffed, in carpaccio or in salad (<\/span><a href=\"https:\/\/www.tomates-de-france.com\/les-tomates\/la-grande-famille-des-tomates\/\"><span style=\"font-weight: 400;\">Tomates et concombres de nos r\u00e9gions, 2021<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During its development, the pigments responsible for the colour of the fruit are mainly\u00a0<\/span><b>chlorophylls a and b<\/b><span style=\"font-weight: 400;\">. When ripe, chlorophyll levels decrease sharply while the relative proportion of violaxanthin, lutein, \u03b2-carotene, lycopene, antheraxanthin and zeaxanthin is up to 9 times higher (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17071647\/\"><span style=\"font-weight: 400;\">Carrari, 2006a<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The main contributors to ripe tomato flavour are volatile compounds of the alcohols and terpenes family,\u00a0including: cis-3-hexanal, cis-3-hexanol, hexanal, 3-methylbutanal, sulcatone, 1-pentan-3-one, trans-2-hexanal, methyl salicylate, 2-isobutylthiazole and \u03b2-ionone (Carrari, 2006b).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">However, their abundance can vary by several orders of magnitude depending on the age of the tomato variety (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">). In fact, it has been shown that in the more modern varieties the concentrations of \u03b2-ionone are lower, in the order of ng\/g of fresh fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">). In addition, hexanal concentrations were found to be higher in older varieties, in the range of \u03bcg\/g fresh fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>But it is important to point out that environmental conditions as well as the degree of ripeness have determining roles in affirming or not the organoleptic qualities of the fruit<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/www.semanticscholar.org\/paper\/Factors-influencing-levels-of-phytochemicals-in-and-Tiwari-Cummins\/99041afebcc29c1b0abbcfca3fe1d011ec35aca2\"><span style=\"font-weight: 400;\">Tiwari, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Many researchers have been interested in the beneficial effects of tomatoes in cancer<\/b><span style=\"font-weight: 400;\">\u00a0thanks to some of their bioactive compounds. These bioactive constituents include phytochemicals such as carotenoids and polyphenols, including lycopene (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16569051\/\"><span style=\"font-weight: 400;\">Lenucci, 2006<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>A 6-year follow-up cohort study showed that tomato consumption was associated with a lower risk of prostate cancer<\/b><span style=\"font-weight: 400;\">\u00a0due to a significant presence of lycopene between 7.8 and 18.1 mg per 100 g (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7754995\/\"><span style=\"font-weight: 400;\">Willett, 1995<\/span><\/a><span style=\"font-weight: 400;\">) A meta-analysis confirmed that higher consumption of carotenoids, including \u03b2-carotene, \u03b1-carotene, lycopene, \u03b2-cryptoxanthin, lutein and zeaxanthin, reduced the risk of oesophageal cancer (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23679292\/\"><span style=\"font-weight: 400;\">Ge, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Of 72 studies identified, 57 reported inverse associations between tomato consumption or blood lycopene levels and cancer risk, of which 35 of these inverse associations were statistically significant (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/10050865\/\">Giovannucci, 1999<\/a>).
