It\u00a0<\/span><b>was discovered in the 15th century by Christopher Columbus<\/b><span style=\"font-weight: 400;\">\u00a0and arrived in France a century later (<\/span><a href=\"https:\/\/www.lesfruitsetlegumesfrais.com\/fruits-legumes\/legumes-fruits\/tomate\"><span style=\"font-weight: 400;\">Interfel, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Contrary to popular belief, the tomato is a\u00a0<\/span><b>fruit<\/b><span style=\"font-weight: 400;\">, even though it\u00a0<\/span><b>is eaten as a <\/b><span style=\"font-weight: 400;\">vegetable. It is available all year round, but the peak season is from May to September (<\/span><a href=\"https:\/\/www.lesfruitsetlegumesfrais.com\/fruits-legumes\/legumes-fruits\/tomate\"><span style=\"font-weight: 400;\">Interfel, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The vine tomato is medium-sized, very pulpy and very fragrant. Its firm flesh allows it to be eaten in soup, salad or in a cooked dish (<\/span><a href=\"https:\/\/www.tomates-de-france.com\/les-tomates\/la-grande-famille-des-tomates\/\"><span style=\"font-weight: 400;\">Tomates et concombres de nos r\u00e9gions, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During its development, the\u00a0<\/span><b>pigments<\/b><span style=\"font-weight: 400;\">\u00a0responsible for its colour are mainly\u00a0<\/span><b>chlorophylls a and b<\/b><span style=\"font-weight: 400;\">. When\u00a0<\/span><b>ripe<\/b><span style=\"font-weight: 400;\">, chlorophyll levels decrease sharply while the\u00a0<\/span><b>relative proportion of violaxanthin, lutein, \u03b2-carotene, lycopene, antheraxanthin and zeaxanthin is up to 9 times higher<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17071647\/\"><span style=\"font-weight: 400;\">Carrari, 2006a<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The main contributors to the\u00a0<\/span><b>flavour<\/b><span style=\"font-weight: 400;\">\u00a0of ripe tomato are\u00a0<\/span><b>volatile compounds of the alcohol and terpene family<\/b><span style=\"font-weight: 400;\">\u00a0including: cis-3-hexanal, cis-3-hexanol, hexanal, 3-methylbutanal, sulcatone, 1-pentan-3-one, trans-2-hexanal, methyl salicylate, 2-isobutylthiazole and \u03b2-ionone (<\/span><a href=\"https:\/\/academic.oup.com\/jxb\/article\/57\/9\/1883\/620099\"><span style=\"font-weight: 400;\">Carrari, 2006b<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">However, their abundance can vary by several orders of magnitude depending on the age of the tomato variety (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">). In fact it was highlighted, in the more modern\u00a0<\/span><b>varieties<\/b><span style=\"font-weight: 400;\">, that the concentrations in\u00a0<\/span><b>\u03b2-ionone were lower<\/b><span style=\"font-weight: 400;\">, in the order of ng\/g of fresh fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">). In addition, the concentrations of\u00a0<\/span><b>hexanal<\/b><span style=\"font-weight: 400;\">\u00a0were found to be<\/span><b>\u00a0higher in older varieties<\/b><span style=\"font-weight: 400;\">, in the order of \u03bcg\/g of fresh fruit (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\"><span style=\"font-weight: 400;\">Tieman, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">But it is important to point out that the environmental conditions as well as the degree of ripeness have determining roles in affirming or not the organoleptic qualities of the fruit (<\/span><a href=\"https:\/\/www.tib.eu\/en\/search\/id\/elsevier%3Adoi~10.1016%252Fj.foodres.2011.09.007\/Factors-influencing-levels-of-phytochemicals-in\/\"><span style=\"font-weight: 400;\">Tiwari, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Many researchers have been interested in the\u00a0<\/span><b>beneficial effects<\/b><span style=\"font-weight: 400;\">\u00a0of tomatoes in\u00a0<\/span><b>cancer<\/b><span style=\"font-weight: 400;\">\u00a0thanks to some of its\u00a0<\/span><b>bioactive compounds<\/b><span style=\"font-weight: 400;\">. These bioactive constituents include\u00a0<\/span><b>phytochemicals<\/b><span style=\"font-weight: 400;\">\u00a0such as\u00a0<\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">\u00a0and\u00a0<\/span><b>polyphenols<\/b><span style=\"font-weight: 400;\">, including\u00a0<\/span><b>lycopene<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16569051\/\"><span style=\"font-weight: 400;\">Lenucci, 2006<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A 6-year follow-up cohort study showed that tomato consumption was associated with a\u00a0<\/span><b>lower risk of prostate cancer<\/b><span style=\"font-weight: 400;\">\u00a0due to a significant presence of\u00a0<\/span><b>lycopene<\/b><span style=\"font-weight: 400;\">\u00a0between 7.8 and 18.1 mg per 100 g (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7754995\/\"><span style=\"font-weight: 400;\">Willett, 1995<\/span><\/a><span style=\"font-weight: 400;\">) A meta-analysis confirmed that higher consumption of\u00a0<\/span><b>carotenoids<\/b><span style=\"font-weight: 400;\">, including \u03b2-carotene, \u03b1-carotene, lycopene, \u03b2-cryptoxanthin, lutein and zeaxanthin,\u00a0<\/span><b>reduced the risk of esophageal cancer<\/b><span style=\"font-weight: 400;\">\u00a0(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23679292\/\"><span style=\"font-weight: 400;\">Ge, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Of 72 studies identified, 57 reported\u00a0<b>inverse associations between tomato consumption<\/b>\u00a0or\u00a0<b>blood lycopene levels<\/b>\u00a0and<b>\u00a0cancer risk<\/b>, of which 35 of these inverse associations were statistically\u00a0<b>significant<\/b>\u00a0(<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/10050865\/\">Giovannucci, 1999<\/a>).
