Initially known as an ornamental plant, its cultivation <\/span><b>spread to France in the 19th century <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.kloranebotanical.foundation\/fr\/la-tomate-cerise\"><span style=\"font-weight: 400;\">Klorane Botanical Foundation, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Round or olive-shaped, the cherry tomato does not exceed a diameter of 3 to 4 cm.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">During its development, the <\/span><b>pigments <\/b><span style=\"font-weight: 400;\">responsible for its colour are predominantly <\/span><b>chlorophylls a and b<\/b><span style=\"font-weight: 400;\">. When ripe, chlorophyll levels decrease sharply while the relative <\/span><b>proportion of violaxanthin<\/b><span style=\"font-weight: 400;\">, <\/span><b>lutein<\/b><span style=\"font-weight: 400;\">, <\/span><b>\u03b2-carotene<\/b><span style=\"font-weight: 400;\">, <\/span><b>lycopene<\/b><span style=\"font-weight: 400;\">, <\/span><b>antheraxanthin <\/b><span style=\"font-weight: 400;\">and <\/span><b>zeaxanthin <\/b><span style=\"font-weight: 400;\">is up to <\/span><b>9 times higher <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17071647\/\"><span style=\"font-weight: 400;\">Carrari, 2006<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Its content of glucose, fructose and sucrose, but also organic acids such as citric acid and malic acid, gives it a <\/span><b>sweet yet slightly acidic taste <\/b><span style=\"font-weight: 400;\">that makes it highly appreciated (<\/span><a href=\"https:\/\/www.frontiersin.org\/articles\/10.3389\/fpls.2016.01286\/full\"><span style=\"font-weight: 400;\">Zhao, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The cherry tomato has notable quantities of <\/span><b>flavonols<\/b><span style=\"font-weight: 400;\">, including rutin, kaempferol rutinoside and naringenin chalcone (NC), which gives it <\/span><b>antioxidant and modulating properties at the cellular level<\/b><span style=\"font-weight: 400;\">. Furthermore, rutin has <\/span><b>anti-carcinogenic, anti-microbial, anti-inflammatory <\/b><span style=\"font-weight: 400;\">properties <\/span><b>and protects against heart disease. <\/b><span style=\"font-weight: 400;\">Kaempferol rutinoside can be used for wound healing and NC, the main active component of tomato skin, has <\/span><b>anti-allergic <\/b><span style=\"font-weight: 400;\">activity (<\/span><a href=\"https:\/\/www.nature.com\/articles\/s41598-018-19214-3\"><span style=\"font-weight: 400;\">Wang, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Many researchers have also been interested in the beneficial effects of tomatoes in cancer prevention thanks to their <b>bioactive compounds<\/b>, including carotenoids. A cohort study with a 6-year follow-up showed that the consumption of cherry tomatoes was associated with a <b>lower risk of prostate cancer <\/b>thanks to a high presence of lycopene between 7.8 and 18.1 mg per 100 g (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7754995\/\">Willett, 1995<\/a>).
