The main organic acids tend to increase irregularly during strawberry ripening (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23265501\/\"><span style=\"font-weight: 400;\">Ornelas-Paz, 2013<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A common denominator in the pathogenesis of most chronic inflammatory diseases is the involvement of oxidative stress, related to the production of ROS (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28130090\/\"><span style=\"font-weight: 400;\">Gasparrini, 2017)<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><b>Several <\/b><b><i>in vitro <\/i><\/b><b>and <\/b><b><i>in vivo <\/i><\/b><b>studies have reported the effects of strawberry extracts on the suppression of oxidative stress and the inflammatory process. <\/b><span style=\"font-weight: 400;\">The polyphenols contained in strawberries are believed to be responsible for these beneficial properties (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31980299\/\"><span style=\"font-weight: 400;\">Battino, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Epidemiological and clinical studies show that acute consumption appears to improve postprandial glycemic response. At the same time, <\/span><b>prolonged intake is reported to improve plasma lipid profile, promoting cardiovascular health<\/b><span style=\"font-weight: 400;\">, especially in those at increased risk of metabolic syndrome (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26357900\/\"><span style=\"font-weight: 400;\">Forbes-Hernandez, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">To explain their beneficial effects, much attention has been paid in the past to the antioxidant properties of strawberry polyphenols. However, recent research has shown that their biological and functional activities are related not only to antioxidant capacity but also to the modulation of many cellular pathways involved in metabolism, survival, proliferation and antioxidant defences (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26357900\/\"><span style=\"font-weight: 400;\">Forbes-Hernandez, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Generally speaking, phenolic acids (hydroxycinnamic and hydroxybenzoic acids) are in the majority in strawberries, followed by anthocyanins, flavonols and flavan-3-ols (<\/span><a href=\"https:\/\/europepmc.org\/article\/AGR\/IND43792118\"><span style=\"font-weight: 400;\">Seeram, 2006<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/www.hevs.ch\/en\/rad-instituts\/institute-of-life-technologies\/projects\/phenolic-compounds-profile-of-strawberry-fruits-of-charlotte-cultivar-3307\"><span style=\"font-weight: 400;\">Kosi\u0144ska, 2013<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30174053\/\"><span style=\"font-weight: 400;\">Nowicka, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Among the phenolic acids, ellagic acid and coumaric acid derivatives are generally predominant. While pelargonidin-3-glucoside is the major anthocyanin in strawberry, the presence of cyanidin-3-glucoside and pelargonidin-3-acetylglucoside has also been reported (<\/span><a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.2740640106\"><span style=\"font-weight: 400;\">Bakker, 1994<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/link.springer.com\/article\/10.1007\/s00217-001-0434-5\"><span style=\"font-weight: 400;\">Lopes-da-Silva, 2002<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">Other compounds usually include quercetin and kampferol derivatives (flavonols), as well as catechin and procyanidins (flavan-3-ols).
