It is particularly present in <\/span><b>India <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\"><span style=\"font-weight: 400;\">Tomer, 2010<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lemons are <\/span><b>oblong or ovoid <\/b><span style=\"font-weight: 400;\">in shape and <\/span><b>bright yellow <\/b><span style=\"font-weight: 400;\">in colour<\/span> <span style=\"font-weight: 400;\">with a thick rind (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\"><span style=\"font-weight: 400;\">Tomer, 2010<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Their flesh is <\/span><b>acidic <\/b><span style=\"font-weight: 400;\">and pale yellow in colour (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\"><span style=\"font-weight: 400;\">Tomer, 2010<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In citrus fruits, <\/span><b>carotenoids <\/b><span style=\"font-weight: 400;\">are<\/span> <span style=\"font-weight: 400;\">the pigments responsible for the <\/span><b>external and internal colouring <\/b><span style=\"font-weight: 400;\">of<\/span> <span style=\"font-weight: 400;\">the fruit. The composition and concentration of carotenoids are influenced by the growing conditions, geographical origins and ripeness of the fruit.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lemons and limes mainly contain <\/span><b>\u03b2-cryptoxanthin <\/b><span style=\"font-weight: 400;\">(from the carotenoid family) and <\/span><b>chlorophyll <\/b><span style=\"font-weight: 400;\">responsible for their <\/span><b>yellow and green colour <\/b><span style=\"font-weight: 400;\">respectively (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21994171\/\"><span style=\"font-weight: 400;\">Zhang, 2012<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S030442381830582X\"><span style=\"font-weight: 400;\">Conesa, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Throughout fruit <\/span><b>ripening, chlorophyll degradation <\/b><span style=\"font-weight: 400;\">was<\/span> <span style=\"font-weight: 400;\">observed, as well as an <\/span><b>increase in \u03b2-cryptoxanthin <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S030442381830582X\"><span style=\"font-weight: 400;\">Conesa, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>acidic taste<\/b><span style=\"font-weight: 400;\"> is<\/span> <span style=\"font-weight: 400;\">due to the presence of <\/span><b>citric acid <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\"><span style=\"font-weight: 400;\">Tomer, 2010<\/span><\/a><span style=\"font-weight: 400;\">). Lemons have a <\/span><b>high concentration of organic acids <\/b><span style=\"font-weight: 400;\">(6.01 g per 100 g) (<\/span><a href=\"https:\/\/ciqual.anses.fr\/\"><span style=\"font-weight: 400;\">Ciqual Table, 2020<\/span><\/a><span style=\"font-weight: 400;\">), including 5.90 g of citric acid.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>volatile compounds <\/b><span style=\"font-weight: 400;\">predominantly present in the juice are mainly monoterpenes, monoterpenoids and esters. Sesquiterpenes have been identified in the peel (<\/span><a href=\"https:\/\/www.hindawi.com\/journals\/jfq\/2018\/3475461\/\"><span style=\"font-weight: 400;\">Cano-Lamadrid, 2018<\/span><\/a><span style=\"font-weight: 400;\">). \u03b1-pinene, \u03b2-pinene, linalool and limonene are characteristic terpenes of lemon peel (<\/span><a href=\"https:\/\/www.tandfonline.com\/doi\/abs\/10.1080\/10412905.2018.1435427\"><span style=\"font-weight: 400;\">Guadayol, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A study conducted on two lemon cultivars: Fino-49-5 and Fino-95, showed that <\/span><b>weather conditions <\/b><span style=\"font-weight: 400;\">had a greater influence on the <\/span><b>concentration of vitamin C and flavonoids <\/b><span style=\"font-weight: 400;\">in the fruit than the cultivar itself (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18254590\/\"><span style=\"font-weight: 400;\">Gonzales-Molina, 2008<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The degree of ripeness of the fruit has an influence on the content of phenolic compounds (<\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0304423818305880\"><span style=\"font-weight: 400;\">Dong, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The health benefits of <\/span><i><span style=\"font-weight: 400;\">C. limon<\/span><\/i><span style=\"font-weight: 400;\">, recently scientifically demonstrated, include <\/span><b>anti-inflammatory, antimicrobial, anticancer and antiparasitic activities<\/b><span style=\"font-weight: 400;\">. These effects are thought to be associated with the high content of phenolic compounds, mainly flavonoids and phenolic acids (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31963590\/\"><span style=\"font-weight: 400;\">Klimek-Szczykutowic, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">P-coumaric acid, ferulic acid, eriocitrin and hesperidin are reported to be the predominant phenolic compounds in the fruits of <\/span><i><span style=\"font-weight: 400;\">Citrus limon L.
